Chicken with cilantro sauce is a flavorful dish made with smoked paprika–marinated chicken and a creamy cilantro yogurt sauce. While the original recipe calls for pan-frying the chicken, this health-conscious version is baked in the oven and finished under the broiler, then served with green beans and warm corn tortillas.

⸻

Ingredients

For the Chicken Marinade
• 6–8 boneless, skinless chicken thighs
• Smoked paprika, to taste
• Cayenne pepper, to taste
• Dried oregano
• Salt & black pepper
• 2–3 garlic cloves, finely minced
• A generous handful of fresh cilantro, finely chopped
• Juice of ½ lemon
• Avocado oil

For the Cilantro Sauce
• 1 cup plain Greek yogurt
• 1 packed cup fresh cilantro (stems included)
• Juice of ½ lemon
• 1 small garlic clove
• Salt & pepper, to taste
• 1–2 tsp honey (optional)

For Serving
• Green beans
• Corn tortillas

⸻

Instructions

1. Marinate the Chicken
1. In a bowl, combine smoked paprika, cayenne, dried oregano, salt, and black pepper.
2. Add garlic, chopped cilantro, lemon juice, and avocado oil.
3. Toss chicken thighs until evenly coated.
4. Cover and marinate for at least 30 minutes.

⸻

2. Bake the Chicken (Health-Conscious Method)
Note: The original Chicken with Cilantro Sauce recipe calls for pan-frying the chicken. This version is baked for a lighter option.

1. Preheat oven to 350°F (175°C).
2. Place marinated chicken thighs in a baking dish.
3. Bake for 35 minutes, or until cooked through.
4. Broil for the final 5 minutes to add color and crisp edges.
5. Remove from oven and let rest.

⸻

3. Make the Cilantro Sauce
1. Add Greek yogurt, cilantro, lemon juice, garlic, salt, pepper, and honey to a blender.
2. Blend until smooth and vibrant green.

⸻

4. Serve
1. Plate the baked chicken with cilantro sauce spooned over the top or on the side.
2. Serve with green beans and warm corn tortillas. #chickenwithcilantrosauce #cilantrorecipes #bakedchicken #healthycomfortfood #thatbrandendude by @brandenehia

KFC Famous Bowl Casserole! If you love mashed potatoes, corn, crispy chicken, gravy, and melted cheese, this one is for you! I turned the classic KFC Famous Bowl into an easy, cheesy casserole that’s perfect for a comfort food dinner. Made with creamy homemade mashed potatoes, fried chicken bites from Sam’s Club, corn, brown and turkey gravy, and plenty of melted cheese. Finished with extra gravy on top because why not? This is easy comfort food the whole family can enjoy!
‼️‼️ I recommend air frying the chicken first ‼️‼️

Fried Pickles

Cut dill pickles into spears and pat them dry.

Set up a dredging station with flour, beaten egg, and panko breadcrumbs.

Dredge each pickle spear in flour, then egg, then panko, making sure they’re well coated.

Heat oil and fry the pickles until golden brown and crispy. Drain on a paper towel-lined plate.

Serve hot with ranch for dipping. #FriedPickles #PickleLovers #EasyRecipes #Foodie #ThatBrandenDude by @brandenehia

Chicken Stir Fry

I started by velveting my chicken with baking soda, cornstarch, MSG, and a few other seasonings. Let it sit for about 15 minutes, then fry the chicken in a little shallow oil in a wok until crispy. Remove and set aside.

In the same wok, stir fry the mushrooms, bell peppers, onions, garlic, ginger, and water chestnuts until tender.

For the sauce, combine oyster sauce, soy sauce, chili garlic sauce, sesame oil, black pepper, MSG, and a little water.

Add the crispy chicken back to the wok, pour in the sauce, and toss everything together until coated and heated through. Serve over rice.

And remember: that wok or pan needs to be HOT. Like extremely hot. Just not so hot that you burn ya fuckin self. #ChickenStirFry #ChickenRecipe #StirFry #WhatsForDinner #ThatBrandenDude by @brandenehia
