THE PROBLEM: There simply aren’t enough butchers to go around. This trade is labor-intensive (to say the least! 🥵) and faces a workforce that is shrinking.

THE SOLUTION: Butcher Solutions, LLC specializes as a traveling butchery school that visits individual facilities to train personnel in-house. We strive to build skills and confidence for meat cutters while saving meat processors valuable production time and turning out higher quality products ✨🥩✨. We also provide meat science education 📚 and industry consultation 📞.

Thank you for following Butcher Solutions, LLC. We're glad you're here! by @butcher_solutions_llc

What if ranchers could get paid more fairly for the beef they’re actually producing? @butcher_solutions_llc

Right now, cattle producers are incentivized to raise the heaviest cattle possible—and they’re paid based largely on how many pounds are on the hoof.

But more weight doesn’t necessarily mean more usable meat. Sometimes, it means more fat.

And the system used to calculate beef yield was created in the 1960s, when cattle looked very different than they do today.

That may finally be changing.

Meat scientist and butcher educator Sierra Anthony explains that new MRI technology can measure the actual composition of cattle—how much is muscle, fat and bone. At least one major packer has already committed to using the technology beginning in 2028.

The data is showing something surprising: cattle may be reaching their desired marbling weeks earlier than previously thought.

That could mean fewer days on feed, less unnecessary fat, and—most importantly—a system that better reflects the actual value ranchers are producing.

For decades, the incentive has been: more pounds = more money.

What if we started paying ranchers for more meat—not just more weight?

Because if ranchers are doing the work of raising America’s beef, they deserve to be paid fairly for what they’re actually producing.

Allowing time for meat to go into rigor mortis before boning out will improve tenderness and meat quality. For smaller game like deer, antelope and bear, 6 to 8 hours is sufficient. For large game like moose and elk, 12 hours is best. For this black bear, the meat cooled overnight in a tree and was boned out the next morning for a lighter pack-out. by @butcher_solutions_llc
