Zucchini Scarpaccia with grated tempeh 💚😋🌱
500g mandolin sliced courgettes
2 small re onions thinly sliced.
2/3 cup chickpea flour
1/3 cup cornflour
Juice from courgettes ( see method).
Grated tempeh about 50g.
Lightly salt the courgettes and onions. Then drain the sliced veg on a colander and catch the juices in a bowl. Put a weight on top or just give them a really good squeeze with a clean tea towel. Leave for about an hour. Use the juice to make a batter with the two flours. Add lots of black pepper. If the batter is too thick add a little water. Put the veg in the batter and stir gently until just coated. Spread the mixture on a large tray lined with greaseproof paper. Sprinkle with nooch and grated tempeh. Bake for 40 ish minutes at 180c until crispy and brown. Serve with salad and or potatoes. Yum #vegan #plant #plantpowered #courgette #worldveganday by @cally_cooks_vegan

A medley of mushrooms 🍄‍🟫😋🌱. I’d love to say that I foraged for these beauties but they came from the very wonderful @the_mushroom_barn in the New Forest. Served with seeded sourdough toast avocado smoky tofu and lots of alfalfa sprouts. The mushrooms have their own unique flavours but they are enhanced by a tiny sprinkle of salt, garlic granules and black pepper. This box contained lions mane, pink oyster, yellow oyster, grey oyster and shiitake mushrooms. 🍄‍🟫 yum yum yum #mushrooms #vegan #plants #mushroomdelivery #newforest by @cally_cooks_vegan
