Today we visited @tropikal_montreal in Montreal, our final stop had to be with a BANG, and @chef_jaeanthony more than delivered. its clear to see why he is who he is. This Modern Caribbean restaurant really transformed some classic Caribbean dishes, merging flavours and textures that were harmonious to say the least. The Vibes in Tropikal were amazing, great music with friendly staff that made us feel extremely comfortable.

We had:

Throughout my chef career, I’ve accomplished a lot , but being invited to Barbados Food & Rum is truly one for the books.
The hospitality, the love, the energy… being back home hit different and brought a wave of nostalgia.

From visiting local farms to connecting with chefs and mixologists who represent the island with pride, every moment was a blessing.

A big thank you to Barbados Food & Rum for the opportunity. I’m truly excited to see what we create together next year.

Last week I had the great honour of cooking alongside chefs I truly admire at Culinary Week by Lifestyle in Puerto Plata 🇩🇴🔥

We shared recipes, stories, laughter and some serious debates (Jamaican patties vs Trini doubles… the jury’s still out 👀). But more than the food, we built memories — and now, real friendships.

Big love to my brothers and sisters in the kitchen:

And to the man behind the bar keeping us right 🍸 @jmcocktails

A huge shout out to @mauricio.maldonado00, the man who brought us all together. None of this happens without you 🙏🏾

Thank you @lifestyleholidaysvacationclub for having us. Until next year 🤝🏾

Every summer, my calendar fills up,weddings, corporate events, festivals, big and small. And every year my family flies in to help me bring Taste of the Caribbean to Montréal to life. 🇧🇧 🇹🇹 🇯🇲

The best part isn’t just the food (though we go hard on that too) it’s the memories we build together, year after year.

Huge thank you to @MountGayRum for sponsoring us 4 years running and giving me a platform to showcase real talent. 🥃

Big love to @MTLCraftCocktails for those incredible drinks. 🍹

And to my family, my son, and my Tingz Hospitality team, there is no Tingz without you. This is for all of us. ❤️

10 years cooking weddings, anywhere from 20 guests to 375. People assume bigger is better, but small and intimate is its own art.

At 20 guests, you get to speak to every single person at that table. You curate every plate knowing exactly who it’s for. That’s the Harper Wedding, upscale, intentional, personal.

Big or small, the standard doesn’t change.

For the last month, I’ve been deep in the kitchen testing dishes for @cafepaperhill, building out a brunch and aperol menu rooted in Quebec with a Caribbean soul.
Brunch is live and the love has been incredible. God bless every one of you who’s come through.
But the evening menu? That’s where it gets really special.
Good food. Real energy. A future sommelier pairing featuring wines from the African continent, and everything we value when we sit down to eat. Nostalgia. Connection. Intention.
Stay tuned. ✨
