Mole Negro con pollo. A dish that comes from my heart. This sauce contains so much. So many flavors that come together as one. More childhood memories than I can count. There is so much history and culture behind this infamous sauce.

GUT: Gastronomy Union of Tucson Memorable Dishes from Chef's Travels dinner. This is the last of the summer dinner series. I was on the 1st course team. I am sad to see the end of this year's series. I met and worked with so many amazing chefs this summer. I was blessed to be able to participate so much this year. I am hoping to grow and learn more while participating in these kinds of events. It's gives me a chance to get creative and work with ingredients I normally don't. Thank you, @gastronomic_union_of_tucson, for providing a place for chefs to get together and create.

I realized I never posted pics from last months GUT dinner. I really need to get better at posting pics not just to my story 😅 GUT Globally Forked: A tour of world cuisines through plant based plates 7/27/2025. I worked so hard on these dumplings. Coconut vegetable Thai green curry soup dumpling was my addition to the first course team w/ @jjones0285. They came out so good. Now to go through the most recent dinner and practice getting better at posting pictures.
