Sixteen courses, four sold-out nights, and one unforgettable residency at LucidWild Estate in the heart of the Dundee Hills.

Wrapped up an extraordinary culinary journey as acclaimed Chef Sam Saltos @chef_sam_saltos of @hiyaku_pdx took over the proprietor’s private residence for an intimate omakase experience like no other.

With just 12 guests each seating and two seatings per night, the energy around the counter was pure magic. Chef Sam delivered traditional-style craftsmanship at the highest level - pairing pristine seafood flown directly from Tokyo’s Toyosu Market with peak Pacific Northwest ingredients, accompanied by our single-vineyard LucidWild wines and rare artisanal sakes.

To everyone who joined us at the table and shared in the conversation, the laughter, and every singular bite: thank you for making this residency so memorable. And a massive thank you to Chef Sam and the Hiyaku team for their artistry and vision.

Wine country hospitality hits differently when shared with great company. Stay tuned - we’re just getting started. 🥂✨

Just a wee bit late sharing this one (whoops). Hiyaku is incredible! An intimate 8-seat dining experience, Sam crafts the most amazing menus, with wine by Otro Lado and sake from Sake Desu. *Highly* recommend checking them out!!

Unexpected experiences.
One of the things that makes omakase special. A tasting menu, selections from seasonal delicacies mixed with the chef's creativity to delight the senses.
We can talk about the chef's palette, but honestly all I am getting from last night's experience is that we should do it again. And wherever you are, make sure and treat yourself because you deserve it.
Gratitude.🙏🏼

We absolutely loved the Hay-Smoked Oregon Albacore Poke with @oregonseaweed dulse that @chef_sam_saltos of @hiyaku_pdx served at the Winter Waters Seafaring Speakeasy. ❤️ 🐟

Oregon Albacore tuna is prized for its delicate, mild flavor and firm, buttery texture. Its clean taste makes it highly versatile—perfect for grilling, searing, and serving raw in sushi or poke. When you choose Oregon-caught albacore, you’re not only enjoying a high-quality, flavorful fish but also supporting responsible fishing practices and local Oregon fishermen. 🎣 Learn more: @oregonalbacore.

Huge shoutout to the seafood purveyor, @chelsearoseseafood1907 and to our event sponsors: @traveloregon @ordeptag @oregonseafare @thepeoplescoast @ecotrust. 👏
