THE POETRY OF PASTA
From the Heart to the Hands

I’ve been keeping this one quiet for a while, and I can finally share it.

My new cookbook, The Poetry of Pasta, is coming.

This book is deeply personal to me. My love of Italian food began beside my Nonna Maria. In her kitchen, I learned that Italian cooking isn’t about complication. It’s about patience, simplicity, respect for ingredients and knowing when to let your hands do the talking.

Pasta has always represented something more to me than food. Every fold, cut, twist and shape carries history. For generations, that knowledge was passed from one pair of hands to another — by watching, touching and doing.

Making pasta is a form of expression. There is rhythm in the way the dough is mixed, feeling in the way it is shaped and meaning in the way it is shared. Every movement of the hands tells a story, and every plate carries a little piece of the person who made it.

For me, that is poetry.

That is what I wanted this book to capture.

Recipes, techniques, stories and traditions. The relationship between pasta and sauce. The reasons behind the shapes we make and the food we share.

Because food creates connection. It carries memories, brings people around a table and keeps a little piece of the people who came before us alive.

Something that began with my hands is almost ready to be in yours. ❤️🇮🇹 by @chef_tony_alberti

This poem is about pasta. But at its heart, it’s about the connections that make us human.

The hands that teach us. The food that brings us together. The memories that stay with us long after the table is cleared.

We inherit more than recipes — we inherit love, family, identity and the little rituals that make us feel we belong. And even when someone is no longer beside us, a dish they taught us to make can bring them back into the room.

Rooted in Italian food, this book speaks to something universal: the ways people connect across cultures and generations. We may cook different dishes, speak different languages and come from different places, but the things that matter most are shared — love, belonging, generosity, memory and the need to keep the people we love close.

That’s the heart of The Poetry of Pasta: From the Heart to the Hands — a cookbook about pasta, yes, but also about the humanity, stories and traditions carried in every shape we make.

This is the poem that gives the book its name. 🤍

The Big Cheese 🧀

A lovely evening celebrating two Italian favourites 🇮🇹🥂🧀

I was delighted to attend Cheers and Cheese to EU, bringing together Grana Padano PDO and Prosecco DOC for a wonderful tasting event in London @manicomio.city

Thank you to the amazing @morgancheeses who was absolutely brilliant, guiding us through the Grana Padano tasting and sharing her fantastic knowledge and passion for cheese. It was lovely to hear her bring this iconic Italian cheese to life and explore how beautifully it pairs with Prosecco DOC.

Thank you, Morgan, for making the evening so special! 🥂

A perfect pairing, great company and a brilliant celebration of Italian produce. Thank you for having me!

Happy Halloween 🎃🦇🦇🦇🖤 by @chef_tony_alberti

Can you imagine a world without pasta? No spaghetti to twirl, no ribbons of tagliatelle, no little shapes catching the sauce. It would be a much less delicious place.

Pasta means something different to everyone. It can be a quick dinner, a celebration, a taste of home or the dish you discover on a trip and never forget. Made in countless shapes and served in so many ways, it has found its place on tables all over the world.

That love of pasta is at the heart of my cookbook, The Poetry of Pasta: From the Heart to the Hands, out 6 November.

Happy World Pasta Day 🍝🇮🇹 And thank you all for supporting the book and sharing the love for pasta.

Trofie. Repping the old-school way. 🤌🏼🇮🇹 by @chef_tony_alberti

Tortellini — a small fold of pasta, carrying generations within it.

More than a shape, it is patience, precision and tradition passed from one pair of hands to the next.

Folded by hand, shaped with care, and filled with a story that began long before us.

Some traditions are written down. Others are remembered by the hands. 🤌🏼🇮🇹 by @chef_tony_alberti
