Behind the Menu | EbonyLife Place London

A look back at the official opening of this remarkable new place, by @moabudu @ebonylifeplacelondon

From developing and refining dishes to bringing the menu to life on the night, it was a pleasure working alongside Chef Chris.

A celebration of West African flavours, approached with creativity, contemporary techniques and an appreciation for the stories behind the food.

From canapés to plated mains, here’s a glimpse of what we created.

Grateful to have been part of such a memorable occasion.

Nigerian food in london. African food in london. Best Jollof rice. Suya in london by @chefabdulfatai

Dinner, networking and a little bit of fire… literally 😂

I was invited by Chop Collective to their monthly creator supper club at Monika’s in Deptford and honestly, what a lovely evening.

The food was AMAZING, but getting to meet and connect with so many creators made the experience even better.

Add dancers, a DJ and a bartender putting on a whole fire show and you already know… good time was had.

Thank you @monikarestaurants and @chopcollective @chopcollectiveagency for having me.

come see where Nellysworldoftaste ends up next…

When not in the kitchen or locked in R&D, some days are about trading the pass for the drum smoker, soaking in the energy and letting the culture drive the craft. 🪵🔥

WORLD GASTRONOMY DAY 🌍🇳🇬

West African cuisine is a story of heritage, innovation, and flavour.

From the depth of iru, the richness of egusi, the heat of ata rodo, and the artistry of open-fire cooking, Nigerian cuisine is built on centuries of culture, innovation, and flavour.

As an Afro-fusion chef, my mission is to honour these traditions while presenting them in ways that inspire new audiences around the world.

Today, we celebrate not only food, but the stories, people, and heritage behind every dish.

West Africa belongs on the world gastronomy map.

THE BEAUTY OF AFRICA TO THE WORLD

IRU

Most people know soy sauce.

Most people know miso.

Few people know iru.

Made from fermented locust beans, iru has been adding depth, richness and umami to West African cuisine for centuries.

Long before chefs spoke about “umami”, African cooks were building layers of flavour with ingredients like iru.

Today, I use it not only in traditional dishes but also in modern Afro-fusion cooking:

• Iru compound butter
• Iru glazed chicken
• Iru popcorn
• Iru prawn bisque

Iru is to Nigeria what miso is to Japan.

This is the first post in a new series exploring the ingredients that have shaped African cuisine and how they continue to inspire modern cooking.

Africa to the World.

How do you use iru?

This is Part 1 of The Beauty of Africa to the World; a series exploring the ingredients that shaped African cuisine and their place in modern Afro-fusion cooking.

Follow to discover the next ingredient.

Luxury isn’t always Loud.

For this plate, the focus was balance and contrast.
Butter-poached Lobster Tail for sweetness and tenderness.
Tempura claws for crisp texture.
Warm Ehuru curry layered with depth and subtle heat.
Dollop of Caviar bringing salinity and elegance.
Lobster Mayo bringing richness, while black garlic adds that deep umami finish.

Finished with Iru oil, and garnished with crispy curry leaves and fresh dill for aroma, freshness and depth.

Every component has a purpose.
Every flavour built to complement the next.

Afro-fusion cuisine, refined through technique, flavour and intention.

Flour. Time. Patience.

This isn’t just bread, it’s memory, technique and flavour on one plate.

Agege bread… but not how you know it.

Baked fresh and served with smoked salt butter and pickled onions for balance, heat and acidity.

Simple food, done properly.
