My non-negotiable’s for cooking pork chops:
1. Always brine pork chops. 4 hour minimum. Wet vs. dry is up to you.
2. My trick for crispy crust is reverse searing first. Ie I bake them on a wire rack in the oven at 200 F until internal temp of 135, then finish in a pan for a beautiful sear. Baking ahead of time dries out exterior while keeping interior very moist. Which means better sear in the (cast iron or carbon steel) pan, less moisture loss and fat rendering out. Overall superior cook! I used to be critical of reverse sear years ago, but it’s almost always what I use now when cooking SO many proteins.
Notes: you need an internal read therm (I love @meatermade) These @eat.campogrande chops are now available at @wholefoods #recipe #homecooking #privatechef #cheflife by @chefbeckybrown

Nobody tell @gordongram 🍳

Recipe:
8 eggs
3/4ish tsp kosher salt
2 T room temp butter

Crack 8 eggs into a bowl and add salt. Whisk aggressively until totally combined. Set aside for 15 minutes!
Meanwhile, preheat your stainless pan over medium-low heat for 10-15 minutes until 350-375 degrees. Test the pan by pouring water on the surface— pan is ready when the water droplets bind together and roll around on the pan, not evaporating immediately. **infrared thermometers are not accurate! ** move pan off the heat for 2 minutes to cool slightly or your butter will burn. Now add the butter, turn heat back on and immediately add the eggs, stirring with a spatula for 5 minutes.

Outside of knife work, these are 3 of the primary building blocks of high level cooking. It’s not fancy but the ROI is peak. #chef #homecooking #recipe by @chefbeckybrown

These egg bites are high in protein and calcium and also incredibly flavorful and don’t have the tough consistency of most egg bite recipes.

My secret is cheeeeeeseeeee!
Recipe:

8 eggs
1/2 c cottage cheese
2 scant cups shredded high quality white cheddar
Pinch salt
Bacon or other mix in of choice

Blend eggs, salt, cheddar and cottage cheese, in vitamix or stick blender until perfectly smooth.
Pour into muffin cups (yield 11-12), sprinkle with bacon or other topping, and bake 325 for 20 minutes (half the time on convection if you can).
Enjoy! by @chefbeckybrown
