This pot was nothing short of an experience. Loaded with blue crab, snow crab, jumbo shrimp, smoked chicken, beef sausage, and andouille—every bite layered with depth and soul. I usually make my roux with duck fat, but this time I used a high-quality beef tallow instead. Browning it filled the house with the aroma of a prime steakhouse—rich, smoky, and unforgettable.
Stay warm out there, Texas. I know this kind of cold isn’t something we’re used to, but it’s the perfect weather for a bowl of something this hearty.

Day 33 of posting every day until I make my first million as a private chef and caterer who didn’t go to culinary school.

3 events in 1 day yesterday… a new personal record! And now we’re back up and at it again for the 4th this weekend—and I’m ready.

Ever since I started this journey of posting every day until I become a millionaire as a private chef, the grind has kicked into a whole new gear. But God… God has provided a willing and able team, the right resources, patient clients, and constant reassurance.

What’s even more mind-blowing is how many people come up to me now saying they’re rooting for me to hit that million. The love is real. The support is loud. And the mission is still in motion.

God is amazing. Let’s keep going.

New milestone in my fitness journey! The lowest weight I’ve EVER been in my adult life was around 189 lbs, but I’ve spent about 90% of that time between 220–256 lbs. In 2025, I was at 244 lbs. Today, we out of the 200s, folks 🫡

I’m most proud that this came from my own decisions and hard work. No health scares. Just the desire to be better and healthier as I get older.

I’ve been actively working on my weight for six years—different gyms, trainers, and all types of classes and programs. But for me, nothing made the difference that cutting out alcohol did. And I drank the low-calorie stuff! Gin and club soda was my drink of choice, but eliminating alcohol completely was the GAME CHANGER.

Anyways, have y’all booked? 😂 For our health-conscious folks, I’m officially proof that we can make health-conscious food that’s equally as delicious, ’cause I promise ya, I haven’t been missing any meals!

Being from Alabama taught me soul and how food brings a community together.

San Antonio taught me that food can be expressive, a form of art, and a deeper reflection of who you are.

Together, they shaped The Chef Kaius Xperience. Rooted in soul. Expressed through art. Shared at the table.

Mesquite-Smoked Prime NY Strip, finished with a Brown Butter Parmesan Mornay, toasted breadcrumbs, and fresh herbs, then baked into a golden Parmesan crust.
On the side: potatoes cooked in chicken stock, then fried in lemon-garlic confit oil with fresh herbs. And Cucumber Salad with red onion, feta, crushed pistachios, and champagne vinaigrette to bring it all together.
My thoughts?…sometimes I impress myself and you should book and be impressed too.

“Make it a great day or not…the choice is yours.”

Yesterday, my uncle called and told me AALI—the African American Leadership Institution—was hosting an event with @bossmandaryl Daryl Smith, a million-dollar food truck entrepreneur who turned his operations into a franchise. Had to pull up and get some game!
Young brother with an impressive résumé shifting a hustle mindset to an ownership mindset and he was generous with sharing his journey, how he got started, and the moves that helped him build his business. Timely for me.
Afterward, I got to check out Secret Food Stories and support the fam, Chef Ashley from @peaceofcake210 Peace of Cake, and my friend Chef Asantewaa, who was hosting @secretfoodstories Secret Food Stories Festival.
Had a little lunch downtown and just overall good vibes and people.

Now, I don’t want TOO many Saturdays off 😂 Go ahead and book your boy Chef Kaius at thechefkaiusxperience.com!
