Our pickle game is strong. A combo of 4 different pickles, a Szechuan and cucumber pickle, lotus root sake soy, daikon rice wine and a red radish with red vinegar. Crunchy, sweet & sour salty goodness. #delicious #yummy #pickle #cheflife #handmade @east.pavilion @chef.yuke by @chefphillipdavenport

There is nothing like cooking ingredients picked straight from the trees, in this case a mandarin puree to pair with a perfect chocolate tart. Mandarins cooked whole for 4 hours, then seeds taken out, then cooked down with made house arancia orange liqueur, spices and sugar, then pureed till super smooth giving a bitter sweet symphony to the rich chocolate tart. @olivigna #melbourne #estate #delicious #chocolate #mandarin by @chefphillipdavenport

Across Southeast Asia, seafood is often grilled by the beach before making its way to the table. Our Indonesian Turmeric Seafood Curry takes inspiration from this tradition, grilling the snapper and tiger prawns before adding them to the curry for an extra depth of flavour. by @chefphillipdavenport
