Parpatana de atún 🐟🔥
(Tuna collar)

One of the beautiful things of being in Spain is having incredible produce.

This piece is a blue fin tuna collar (sustainably fished ).
The collar is the section located right behind the gills and head. Because it is right next to the Otoro (the ultra-fatty underbelly), it contains some of the richest, most intensely marbled meat on the entire fish, often compared to A5 #Wagyu beef.
In my opinion even better. Kissed over charcoal 🔥What do you think?

Beautiful!

A few months ago, life took an unexpected turn.

I stepped away from Dubai for the summer and found myself in Menorca, surrounded by incredible fishermen, farmers, producers, and some of the freshest ingredients I’ve worked with in years.

After spending most of my career in busy city kitchens, this experience has given me a much deeper understanding of Mediterranean cuisine—not just the recipes, but the culture, seasonality, simplicity, and respect for ingredients that make it so special.

From fish coming straight off the boat to local vegetables, olive oil, and cheeses, it’s been a reminder that great cooking doesn’t need to be complicated.

Grateful for the experience, the people I’ve met, and everything I’ve learned along the way.

Dubai has been home for many years, and we’ll will be back soon. Until then, I’m enjoying every service, every catch, and every opportunity to keep learning.

Big news! I’m honored to become a Burnt Chef Project Ambassador, standing up for mental health awareness in the hospitality industry.

Too many chefs and hospitality professionals struggle in silence, but it doesn’t have to be that way. It’s time to break the stigma, start real conversations, and support each other in an industry that thrives on passion but often ignores well-being.

Let’s make kitchens healthier places—mentally and physically. Who’s with me? Drop a [🔥] in the comments if you believe mental health matters in hospitality!
Please feel free to reach out to me if you are struggling ❤️
