Thai green curry with tofu 🍛 You can’t beat a homemade curry paste, You just can’t get the same flavour from a jar. I used to absolutely hate tofu but I recently found a new love for it! It’s doesn’t taste like rubber or feet anymore, which is great now that I’m trying to be more plant based🙌 After recently spending a month back in Thailand where I once lived, this is a comforting bowl of food to remind me of my second home. 🇹🇭 #thaigreencurry #tofugreencurry #greencurry #vegancurry #veganuary #thaifood #eatwell #stickyrice #homemadefood #delicious #isolation #chelsieskitchenantics @chelsievere by @chelsieskitchenantics

Homemade soba noodles 🥢 So it was my first time making soba noodles today! It was definitely worth it but surprisingly not as easy as I thought it would be and like all the YouTube professionals ha ha The ingredients involve just buckwheat and water that’s it…but to what ratio? I threw my dough away twice because it crumbled! But I didn’t give up and the final result was so good and better than expected 🥳 I ate them the traditional way, cold. A key factor in making sober noodles is that you have to make sure you rinse them With cold water after you cook them, otherwise they will turn to mush. In Japan soba noodles are thought to be medicinal and even though they are made with buckwheat there is in fact no wheat at in buckwheat at all. Great news for a those who struggle with wheat intolerances. And in keeping with veganuary, they’re vegan. I made a simple classic dressing of soy, sesame oil, honey, coriander, garlic and ginger and drizzled it over the salad. I used tuna and which of course isn’t vegan but you don’t have to have it. Give it a try and see my reel on how to make the noodles x #sobanoodles #buckwheatnoodles #japanesesobanoodles蔦 #noodles #vegan #veganuary #vegannoodles #japanesefood #sesame #soy #asianfood #foodie #healthyeating #sundaycooking #chelsieskitchenantics @chelsievere by @chelsieskitchenantics

Malaysian inspired black chickpea and mushroom curry with lentils 🍄 God it was so grey this morning I had a banging headache and there was bugger all in the fridge. So I thought a curry would be ideal, it’s now blazing hot bloody weather and not really curry weather but I made it anyway and I’m so glad I did… 🤤 I very loosely based it on @hemsleyhemsley Malaysian squash curry recipe. But I added a few ingredients such as the chickpeas and mushrooms and left a couple of things out and changed the quantities. I ground up 4 cloves and 2 cardamom pods (after I toasted them) and added the following into my pestle and mortar - 1 tbsp each of cumin, turmeric and ground coriander 1 tsp cinnamon 1 tsp dried chilli flakes 1 tsp mustard seeds I toasted them for a min then added butter and fried a diced onion, big thumb of chopped ginger, 1 green chilli and 3 cloves of garlic and sautéed till all soft and nice. Pour in a tin of coconut milk and 250ml of veg stock. Add button mushrooms and 250g of lentils, a tin of black chickpeas, I used some normal ones as well to bulk it out. Simmer till the lentils are done and add loads of chopped coriander and the juice of a lime. Season. Eat. Not bad for an empty fridge and a banging headache. 🥳 #malaysianinspired #curry #hemsleyhemsley #currynight #blackchickpeas #chickpeacurry #vegancurry #vegan #vegandinner #healthy #lentilcurry #mushrooms #dinnerinspo #dinner #yum #foodie #instafood #homecook #chelsieskitchenantics #eatwell #vegetarian #coconutcurry #spices #instafoodie #delicious #worldsgreatesthomecooks #veganfoodporn #vegetarian @chelsievere #foodpics #foodphotography #foodblogger by @chelsieskitchenantics
