Easy 5 min (maybe less) FRIED TOFU UDON 🍜 - the quickest, no thought or effort recipe you can easily whip together in a pinch. Pulling this recipe in my archives especially after missing Japan. I have a few more udon recipes I’m sharing soon, so follow @clarissaskitchen and stay tuned! 😋

2.5 cups water
2 piece dried Kombu (about 3-4 inches) or 1 packet of dashi
2 tbsp soy
1½ tbsp mirin
1 tsp sugar (optional) - I put a dash of maple syrup sometimes
½ tsp salt, adjust to taste
1-2 frozen Fried tofu (or extra firm tofu) - I usually get the fried tofu from @tokyo.central
Green onion, thinly chopped (for garnish)

Simmer water and dried kombu until softened, then add soy sauce, mirin, sugar and udon. Cook for 1 minute then remove noodles and cook fried tofu for 1-2 minutes until soft. In a bowl, add udon, tofu, broth, and garnish with green onion.

IPA CARMELIZED ONION DIP - The secret to my new favorite onion dip? 🧅

Slowly caramelized onions + @athleticbrewing Run Wild non-alcoholic IPA that’shop-forward, crisp, clean, slightly bitter flavor.

• 2 large sweet onions, thinly sliced
• 1 tbsp olive oil
• 1 tbsp butter
• ½ cup Athletic Brewing Run Wild NA IPA
• 2 cups cottage cheese
• ¼ cup plain Greek yogurt
• 1 tsp Worcestershire sauce
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp kosher salt
• ¼ tsp black pepper
• Fresh chives (optional)

Caramelize the onions low and slow until golden and jammy. Add Run Wild and let it reduce with the onions. Blend the cottage cheese, Greek yogurt and seasonings until smooth, then fold in the cooled caramelized onions and chives.

Serve with your favorite chips, pretzels or veggies. ✨

I love recipes like this for hosting because everyone at the table can enjoy Athletic’s NA brews.

Got everything I needed and then some. If you shop at Tokyo Central, I need your recommendations on what to get next time!👇🏼 @tokyo.central #tokyocentral #japanesefoods #groceryhaul #asianmarket #japanesefood by @clarissaskitchen

Why buy it when you can make it in 10 seconds? This is my favorite money-saving baking hack. I used to buy oat flour alllll the time because it was a staple flour I had for pancakes, baked goods, etc. and realized I could save money with the oats I used for oatmeal by blending it finely. You can even use a sifter to get the oat flour really fine.

Save this for later! If you’re tired of figuring out what to eat every day, these easy roasted potatoes will save your week (and extra dishes). I use this to serve with a protein, alongside eggs, or scramble. So easy to heat up! It’s gluten-free too.

Comment “POTATO” and I’ll DM you the recipe!🥔

Stop throwing away veggies that are about to go bad! This 10-minute trick works for almost any vegetable — cucumbers, radish, carrots, red onion, etc. Save this for your next fridge cleanout! My favorite is the dill pickles though after realizing you can easily make it at home and it is wayyy cheaper than getting at the farmers market

Equal parts water
Equal parts white vinegar (apple cider vinegar works great too)
4-6 tbsp salt
Any veggies you’d like (Persian cucumbers, cabbage, carrots, red onion, etc.)
Whole black peppercorns
Fresh dill
Garlic cloves, smashed (2-3 in each jar)
Dried whole red chili peppers (optional, for 🌶️ kick)

Pour hot liquid over veggies in jar and seal tight! Fridge once cooled down.

my “nomnom” girl drooling over the pick ups from @tokyo.central . The freshly made onigiri is my favorite! 🍙

Going to @tokyo.central is such a treat and prices of the prepped food are not bad at all given the current high food costs! I wouldn’t survive without my @tushbaby either for days like these where Char just wants to be held.

What are your go to pick ups at Tokyo Central?

Also, shout out to the moms that do it all!❤️
