🏆 Please join us in congratulating our own Chelsea Espino on winning the Canadian Culinary Federation’s Young Chef Challenge held in Waterloo, Ontario this week!

🇨🇦 Chelsea represented New Brunswick and competed against junior chefs from all over the country, and she brought home gold.

🥩🧅 Chelsea created two dishes: a small plate of French Onion Soup Reimagined, using aged Balderson cheddar and an onion consommé; and a Striploin, where she harnessed Japanese shio koji to mimic a dry aged flavour on the steak, served alongside mozzarella stuffed potato sunchoke rösti, braised cipollini, sea buckthorn glazed carrot, celeriac puree, béarnaise, and preserved fiddleheads.

Congrats, Chef! 👏

👏 by @culinaryfederationyoungchefs

Yesterday’s @edmontonchefs @culinaryfederation Membership Night and Mixer at @ernestsnait @naitculinary , always great to see members coming together to have fun, learn and connect. One of the highlights of the night was the awarding of the recent graduates of the Certified Chef de Cuisine Program (CCC) Chefs @aguy43083 of NAIT and @seanpoconnor of Fox Burger. Everyone also enjoyed the evening’s Hot Wing Challenge, where competitors face 6 rounds of tasting Chicken Wings tossed in 6 different local Hot Sauces, the last man standing wins, this was a lot of fun, Thanks to everyone who came and joined us!
