Our autumn pickup party was the perfect harvest interlude. Thanks to @plentyonbell and @chef_jesper_johansson for the great grub, @djmanogil and @djmermaidslo for the perfect soundtrack, and of course our members for supporting our work. Cheers! 🥂 by @dovecotewine

Tucked away in the Alisos Canyon AVA, Dovecote isn’t a place you just stumble upon—and that’s exactly the point.

With its unique cool-climate microclimate and limestone soils, this 250-acre estate produces exceptional, low-intervention Rhone varietals that let the land speak for itself.

It’s the ultimate off-the-beaten-path destination for a private group tasting. Escape the crowded tasting rooms, slow down, and experience world-class wine in total privacy.

✨ The Experience:
* Estate Wines: Small-lot, high-altitude Syrah and Rhone blends.
* The Setting: Sweeping vineyard views and total peace on a working ranch.
* Group Tastings: Private, unhurried gatherings tailored for your group.

A little harvest ASMR for you. We picked and pressed our Grenache Blanc this past Wednesday. We also picked the first Grenache from the vines we grafted earlier this year (formerly Syrah). That was an early pick for direct-press Rosé. First red fruit comes in tomorrow!!! by @dovecotewine

We’re making pet nat this year! That’s pétillant naturel aka methode ancestrale, the most ancient way of crafting sparkling wine. This is phase 1, bottling. Our pet nat is made from Syrah rosé that we picked at 17.3 brix. We’re bottling it with right around 16 grams/liter of sugar remaining. The yeast will keep working in bottle to ferment that remaining sugar; since the carbon dioxide produced by this last bit of fermentation has nowhere to go, it creates bubbles in the bottle, hence naturally sparkling wine! Cold settling- what is it and why do we do it? by @dovecotewine

Harvest is upon us! First fruit of the year, Viognier, a full month earlier than 2025. Very low yields (1.76 tons off of this acre), and very vivid flavors. Lots more to come! by @dovecotewine

Our first fruit of the year is allllllmost there. Viognier likely coming in next week, a month earlier than 2025, which seems to be the nature of this vintage. Stay tuned… by @dovecotewine

Here’s how we determine when to pick. It’s a marriage of science and taste. Post-script to this video, Brix (a measurement of sugar) on this fruit are currently at 12, which would be a potential alcohol of about 7%, a significant distance from the chemistry we’re looking for (hence the face). by @dovecotewine

Ever wonder how wine is bottled? Here’s how we do it! by @dovecotewine

Ever put a bottle of wine in the fridge and noticed little crystals at the bottom? Good news: they’re completely natural.

Those crystals are called tartrates. Grapes naturally contain tartaric acid, and when wine gets cold, some of it can form tiny crystals—kind of like the wine version of rock candy.

They don’t affect the taste or quality of the wine, but many people mistake them for something wrong with the wine, or just don’t like the way it looks.

To prevent that, we’re currently cold stabilizing our wines: holding them at near-freezing temperatures so those crystals form before bottling rather than in your refrigerator.

After the crystals have formed, we rack the wine off them before bottling. The crystals are perfectly harmless, but we’d rather they stay in the cellar than make an appearance at your dinner table. by @dovecotewine
