Your mum meant well. The thermometer disagrees. 🌡️😅

Which one did YOUR family swear by? Drop the number below 👇

1️⃣ “Searing seals in the juices”
2️⃣ “Pork has to be white all the way through”
3️⃣ “If it’s pink, the chicken isn’t safe”
4️⃣ “Fish is done when it flakes”
5️⃣ “Don’t let it sit, it’ll go cold!”

Swipe for what’s actually happening inside the meat ➡️

The rule behind all five is the same: colour lies, temperature doesn’t. Pull at the right number, let it rest, and you’ll never serve dry pork, rubbery chicken or flaky fish again.

The full method for every one is in my book, The Irresistible Bite: The Science of Perfect Steak Every Time. Comment BITE and I’ll send you the link plus my free AI cooking calculator, which gives you the exact pull temperature for any cut.

Send this to your mum (with love) ❤️

A white soirée at a private mansion, beneath the most beautiful blue skies. For a moment, it felt like we’d been whisked away to Europe.

The food by @eliadonati was stunning, the views were gorgeous and the music made the day. @joannemusik singing “Jackie” was a highlight, so it felt only right to use it for this reel.

A little late to the feed, as this was last October, but a day this beautiful deserves to be remembered. Thanks for making it this far to read my caption, who reads captions these days? You do. 😉 by @eliadonati

Same pan. Same cooking time. Two completely different steaks. 🥩🔥

So why does one turn out perfect while the other ends up overcooked?

Because cooking steak isn’t just about timing.

🌡️ Thickness affects how quickly it cooks. 🥩 Different cuts need different techniques. ❄️ Starting temperature makes a difference. 🔥 Pan heat changes everything.

The secret? Stop relying on time alone and start cooking to internal temperature.

Even ChatGPT agrees with this 🤖✅😅

My fiancée fact-checks everything I say with ChatGPT… so I cooked a porterhouse medium rare and let her ask away 👀

“ChatGPT, is this true?” 📱 Yes, it is true. 🥩

Here’s why medium rare is the perfect doneness for this steak:
💪 The muscle is at its most relaxed
🧈 The fat starts to melt
🥩 And the collagen hasn’t yet tightened
🌡️ I pulled it at 48°C internal, and the rest took it all the way to 54°C

ChatGPT can tell you a lot, but it can’t give you what you only discover through real chef experience 👨‍🍳🔥
That’s why I put the science of cooking meat together with years in the kitchen, in my book The Irresistible Bite and my free AI cooking tool 📖🤖

Comment STEAK and I’ll send you the link to my free AI tool so you can cook it perfectly too 👇

One of the things I really wanted before my wedding was to have a night with the people who mean so much to me. ❤️

There are so many people who have been a huge part of my life and, although I was so grateful to have my bridal party beside me throughout, I didn’t want this night to be limited to just that.

Having everyone together, sitting around one table, just felt so special and made me realise I am incredibly blessed.

This night was exactly what I wanted it to be and I’ll forever be so grateful that I got to share it with you all ❤️🥀

Does your steak go from RAW to DRY before you find the perfect middle? 🥩🔥

Most people blame the pan, but the real mistake is temperature 🌡️

❄️ Below medium rare, the centre feels raw and the fat stays waxy
🔥 Go too far, and the muscle fibres tighten and lose moisture
✨ At medium rare, the fibres stay tender while the fat begins to render

Here’s the secret 👇
🎯 Pull your steak at 49–50°C internal
⏱️ Let it rest, and carryover cooking takes it to 54–55°C
🥩 Perfect medium rare, every single time

Want perfect temperatures without guessing? Comment BITE and I’ll send you my free AI cooking tool and the link to my book, The Irresistible Bite 📖🤖

Save this for your next steak night and send it to someone who always overcooks their steak 📌😉
