Apricot Jam Tart (Halwet el Ma’joon), though also found it referred to as “Mabroosheh” (literally meaning “grated”).

It’s that time of the month, and the #aroundtheworldin80dishes collab is cooking recipes from Algeria. I decided to go sweet this month, and found two Algerian food blogs that shared a similar apricot slice. A cakey base that is topped with apricot jam, then the remaining dough is grated (hence the name) on top. Unfortunately, my recipe ended up being a bit dry, and my shop bought jam was just too sweet and lacking in apricot flavour. A really nice homemade apricot jam would have made a huge difference. Loved the idea of this cake and would happily try again though!

Check out hosts @thecultiveater and @teffe_kocht for more Algeria posts!

Apple, blackberry and yuzu crumble. Recipe from “Baking & the Meaning of Life” by @helen_goh_bakes

Sharing for the #rainydaybitescookbookclub collab, which is focusing on this fab baking book all year. While I’ve missed the last few, I knew I had to make this dessert. The humble crumble is one of my favourite things to make, and this recipe really takes it up a notch. The addition of bay leaves in the filling, with the cinnamon, vanilla, lemon zest and yuzu juice really made it something special. And that crumble was delicious. I’m amazed I had so much left to top the pie, as I couldn’t stop nibbling at it as I went. Definitely recommend! @rainydaybites

Thai Holy Basil Pork (Pad Kra Pao). Recipe from “Kiin: Recipes and Stories from Northern Thailand” by @chefnuitregular

When Thailand was chosen for this month’s #aroundtheworldin80dishes collab, I immediately consulted this gorgeous book I picked up on my first visit to Thailand, to the northern city of Chiang Mai. I immediately settled on this dish, one of my favourite Thai meals, but something I have never actually made before. After an initial setback (I mistakenly ordered Thai basil, not realising its totally different to holy basil - the Thai basil was relagated to background decoration), I was actually able to knock this out midweek after work, it was that fast! Super delicious and full of flavour, the recipe was as good as any Holy basil dish I’ve had in restaurants.

AFL Grand Final time, and while my team is not playing, I’m still getting into the spirit with some half time snacks: potato and purple sweet potato wedges and a hot honey dipping sauce. Going all in on purple and white, hoping Freo win their first ever flag.

Mahshi (South Sudanese stuffed zucchini and capscicum) with a tomato sauce. Recipe from @tasteofsouthsudan.

As mentioned yesterday, the #aroundtheworldin80dishes collab is cooking South Sudanese food this month. And thankfully, I’m on time! This recipe sounded great, but the the instructions left a lot to personal preference. The recommended spices for the rice and beef filling was cumin, ground coriander and salt and pepper, but without quantities. It also said other spices can be used. So I threw in some chilli too. As always, the onion and garlic were subbed out for spring onion greens and garlic chives. There was no recipe for the tomato sauce, so mine was more garlic chives, passata, tomato paste, and beef stock. I wish I made more, as you can’t quite see it in the picture. It needed to be cooked a tad longer, but my hungry toddler had ran out of patience by this stage. All in all, a tasty dish!

Next stop for the collab is Thailand! Check out the stories of collab hosts @thecultiveater and @simonthepies for more South Sudanese dishes!

Mbakbaka (Libyan Pasta), a delicious and hearty, one-pot dish of lamb, macaroni, capsicum (bell pepper), tomato and lots of spices. The pasta, which is cooked directly in the rich tomato and lamb broth, is so full of flavour. Recipe from @everylittlecrumb

July’s #aroundtheworldin80dishes theme was Libiya. I was super excited for this, the fusion of flavours and cuisines in Libiya was fascinating to read about. However, despite cooking on the posting day, it’s taken me an entire month to post this. Tomorrow is the August posting day, and we will all be sharing dishes from South Sudan. Fingers crossed I’m more organised!

A belated post for the #bakewithrainydaybites collab hosted by @rainydaybites . This is the Lemon, Lime and Orange Brulee Tart from @helen_goh_bakes’s “Baking and the Meaning of Life”. A fab book full of so many amazing recipes. June’s baking challenge was anything citrus. The filling in this tart was more curd than custard, and was absolutely divine. Sadly, I really struggled to get a good photo and it was a bit of a mess when I cut into it, but it tasted so good and I wanted to share regardless.

Posting late as I’m just getting over a bout of covid. Forgot just how miserable this thing is!!

Chocolate Con Leche (Dominican Hot Chocolate), with evaporated milk, cloves, cinnamon, ginger, sugar, a pinch of salt, and a bar of chocolate. I used @marksandspencerhk’s Single Origin Dominican milk chocolate, though should have used their semi-dark option. I was also super excited to see @carnation_uk has lactose free evaporated milk, the first time I’ve ever found it. So this is completely lactose (if not guilt) free. Super rich and delicious!

Sharing as a bonus for the #aroundtheworldin80dishes collab hosted by @thecultiveater and @manumunson, where we cooked food from the Dominican Republic. Recipe is from @dominicancookingblog, which has so many amazing recipes, it was genuinely hard to choose.

Chimichurri Dominicano (Dominican Chimi Burger), a popular Dominican street food. A beef burger patty made with capsicum, onion (subbed for spring onions), garlic (subbed for garlic replacement), and Worcestershire sauce. Then topped with cabbage, tomato and chimi sauce (a mix of ketchup, mayonnaise, orange juice and more Worcestershire). Traditional chimi burgers should be on a Dominican bun called panes de agua, but as I was time poor, I used bought brioche buns. While I don’t need to make it again, it was really enjoyable, and a very simple and easy recipe.

Recipe from the fabulous @dominicancookingblog. So many great Dominican recipes, so I recommend you check it out!

Fruit & Nut Chocolate Martini - with raspberry vodka, crème de cacao, baileys, frangelico, chambord and whipping cream. This was sooooo much better than I anticipated, and I was already expecting something delicious. I added some roughly chopped frozen raspberries as a garnish, and the whole thing was just perfect. Will make again! Recipe from @diffordsguide.

Crêpes Suzette, a dish of Monegasque or French origin, depending on which story you believe.

The Café de Paris, a renowned Monte Carlo hotel, claims to be the inventor of this iconic dessert. The story goes, a 14 year old waiter accidentally set alight the crepes he was about to serve the Prince of Wales. And as it still tasted good, he decided to serve it all the same. The Prince loved it, and Crêpes Suzette was born. While many have discredited the story, I found it charming and decided to make it for my entry to this month’s #aroundtheworldin80dishes collab, where we are all cooking dishes from Monaco. The @monacotribune published the exact ingredients and quantities used by the famous hotel, so I followed that, with the instructions borrowed from a recipe by @notquitenigella. This was my first time making crepes, so while I’m not super happy with the aesthetics of my photo, I was pleased with how they turned out!!

Lemon meringue martini, anyone? Lemon vodka, baileys, lemon juice and rich simple syrup. Recipe from @diffordsguide

I was hooked with the idea right away, but it was more lemon curd then lemon meringue. Which was still equally yummy, but I feel there’s room to experiment. So I might revisit this sometime soon!
