Producing high quality Extra Virgin Olive Oil means that we must be careful of every detail.

We must understand that what sets EVOO from any other oil is the polyphenols that are found that hold highly beneficial antioxidant properties for our health and wellbeing. The quantity and quality of polyphenols found in olive oil is closely related to the process of olive oil making. This is what sets EVOO from other types of olive oil.

For us the process of olive oil making begins when the olive is picked from the tree. It is then transferred into cases that have holes, that allow air flow and circulation amongst the olives. We then leave the harvest of the day outside in the cool evening and morning frost that generally falls down to the bottom of our farm, where olives rest for the evening. First thing in the morning we start pressing the olives. And that’s how the actual labour of the processing and making of olive oil begins after harvest.

The feet of the strong pillars of our establishment, the women that are crucial at each and every step of the way.
It is important for us to support and provide opportunities for those that want to join us along the way, to build a working environment that represents us. by @erythraioliveoil

Traditional methods that have been used since the beginning of olive cultivation with a hint of modernization.
However, each tree is cultivated with care so that our trees and the bud giving branches are not damaged.
Our olives are picked mostly by hand and trimmed also by hand. We only use machines where it’s not reachable and drop the olives on spreads, and transfer them into breathable cases. by @erythraioliveoil

Still early harvest, olives are green and pinkish, in varied colors. But all from the tree and never from the ground for our EVOO. by @erythraioliveoil

Our harvest begins at September*, and usually ends in December. We start early September for our green table olives but by the 3rd week of September we start pressing our most limited early harvest non-filtered EVOO.

*although we are cautious of the effects of climate change and therefore afraid these dates may differ in recent future to come. by @erythraioliveoil

One year of work, to allow for the space and care for our trees to make fruits for us to then make oil for the use in many different areas of our lives, or olives that could sustain one for long periods of time.
All the efforts quadruple in size, labour and productivity during harvest time. Olives cultivated, either pressed or preserved for future consumption. But all starts here, when the fruits set, ripen and fall to the lap of the spreads laying over the ground. by @erythraioliveoil

In the making of good extra virgin olive oil the most crucial point is the quality of the olives. For Erythrai EVOO only the highest quality of olives are used at the peak of their nutrients and flavors at early harvest, at the peak of more complex aromas and oil content at mature harvest. by @erythraioliveoil

At the core of our business is the most important part of the business, the olive and people behind it. by @erythraioliveoil
