CHICKEN KODATTAM
A fiery, flavorful Kerala-style chicken stir fry that’s all about spice, crunch, and attitude * Perfect for your weekend cravings or to spice up any meal
* Ingredients t
Chicken - 700 g
2 Ginger-garlic paste - 1½ tbsp + ½ tbsp

Method..✨
1. In a bowl, combine the chicken with Kashmiri chilli powder, turmeric powder, salt, ginger-garlic paste, vinegar, and cornflour. Mix well and let it marinate for 1 hour.
2. Heat oil in a pan. Fry the marinated chicken over medium heat until golden and cooked through. Remove and keep aside.
3. In the same oil, add the dried red chillies and sauté for a few seconds.
4. Add the ginger-garlic paste and sauté until the raw smell disappears.
5. Add the sliced shallots and onions. Cook until they turn soft and lightly golden.
6. Add salt, turmeric powder, chilli powder, coriander powder, and garam masala. Sauté well until the spices are aromatic.
7. Stir in the chilli flakes, followed by the tomato sauce. Mix everything well.
8. Pour in the hot water and bring the mixture to a gentle boil.
9. Add the fried chicken and toss well so that every piece is coated with the masala. Simmer for 3-5 minutes until the gravy thickens and clings to the chicken.
10. Finish with fresh curry leaves, give it a final toss, and serve hot

The very popular Meen Mulakittathu, also known as Kottayam Style Meen Curry is an all time favourite of any food lover. This hot, spicy and tangy side dish is the best when cooked in an earthen pot. It is usually served the next day of preparation. It is a choicest dish to be served with rice meals and can be incorporated with Chappathis and Parottas as well. This dish is prepared with Kudampuli (Kokum Star) and so its also called Meen varattiyath 😍😋
