“Everything will be new, as it was before.”

We had the pleasure of being welcomed by the wonderful Petra and Florian Fink into their beautiful family-owned hotel, Fink, in the heart of Brixen.
A place where centuries of history meet impeccable contemporary design, where natural light, beautiful textures and the smallest details create an atmosphere of understated elegance.
The story of Fink dates back to 1896, when Florian’s great-grandfather took over the town’s former post office, a historic building dating back to 1450, and transformed it into an inn and butcher’s shop. More than a century later, Petra and Florian have brought it back to life, carefully preserving its original walls, frescoes and vaulted ceilings while giving it a beautiful new identity.
What makes this place even more special is its philosophy of sustainability and mindful living. From the thoughtful restoration to the predominantly plant-based cuisine, everything revolves around respect for nature, tradition and local ingredients.
And the gastronomy? Truly exceptional. From one of the best breakfasts I’ve ever had to an unforgettable dining experience inspired by ancient monastic recipes, with fresh, seasonal ingredients sourced from local organic farms and monastery gardens.
A perfect balance of history, design, hospitality and exceptional food.
Thank you, Petra, Florian and the entire @fink.restaurant.suites team, for such a beautiful stay and a truly special collaboration. It was an absolute pleasure to experience your world, and I already can’t wait to return. 🤎
