Heart Beet Stew- you need it.

I’ve been a touch obsessed with the incredible @wickdconfections lately, she inspires me in more ways than I can explain. She’s amazing go follow her.

When I saw the video for her Restoration Stew, I immediately knew I needed it. Now- for our plant-based followers, it’s important to know this is a recipe for an Iron Rich, hearty beef stew, designed to support those who bleed every month. A recipe to restore your strength and support your body.

I wanted to make a stew inspired by this masterpiece, but Fox Tale Friendly- so we have for you this weekend a Hearty Beet Stew, featuring chanterelle mushrooms, sweet potatoes, bell peppers, spinach, red lentils, ginger & turmeric, Pumpkin & Sunflower Seeds and most importantly- dark chocolate. As she says- every ingredient has a job, and everything in this will make you feel powerful and amazing. I’m so happy with this dish, and I’m so happy incredible creators are out there, keeping the inspirations alive. Thanks @wickdconfections for your work, I hope this nod to you hits just right. by @foxtalefermentationproject

Mushroom Stroganoff. I’m not sure y’all understand how much this dish means to me.

As a very, very picky eater growing up, food provided me both extreme comfort and serious anxiety. If I didn’t like something, I was scared to eat it. If I loved something- I was obsessed.

Somehow, among all things, cream of mushroom soup was an extreme comfort food. Campbells, of course. It was safe, and it helped me learn to try other things- if I could put the beloved sauce of the gods on it, I’d eat it.

As I grew up, and learned more about food and cooking, I decided to try and start making it from scratch. I’ve been recreating my favorite food in countless variations since my early teen years. Once I figured out I couldn’t eat dairy or gluten, it became even more imperative that I found a way to enjoy my sacred dish.

I’ve since fixed my gut enough to enjoy both gluten and dairy, but I still want to make this something more people can enjoy.

We will be featuring our iteration of Mushroom Stroganoff on the menu for all of fall, winter, and beyond if it is well received. It may be slightly different each time, because we are surrounded by amazing seasonal mushrooms, and I’ve also never really made the same soup twice.

I hope you love the comfort of this dish as much as I do. Think of it like a big hug in a bowl.

Ps- we will be serving this is Gluten Free Pasta, Roast Broccolini, and Crispy Shallots. by @foxtalefermentationproject

The annual release of our beloved Cream of Mushroom Soup has come, and perfectly timed with the return of the beer that many think of when they hear our name- Fung Shui, Candy Cap Mushrooms Saison.

This year’s soup features Golden Chanterelles, Maitake and Nameko Mushrooms from @kingofmushroomssf and their amazing foragers. All in a wildly decadent velvety base loaded with rich spices, herbs, and oats.

Fung Shui is one of the beers that put us on the map- a crisp Farmhouse Ale with Candy Cap Mushrooms from @farwestfungi . At 5.8% abv, it’s the perfect beer to pair with any food, but especially this Mushroom Soup by @foxtalefermentationproject

No season inspires us more than fall.

This weekend will mark the official start of SOUP SEASON which we mark with the release of Wendy’s World Famous Cream of Mushroom Soup.

Will it be 90* this weekend? Yes. Does that change the fact that it’s Annual Mushroom Soup Week? Absolutely not.

Soup will be ready this evening. Can’t wait for yall to enjoy it.

@kingofmushroomssf with all the best shrooms
