Kubbeh Labanieh | كبة باللبن

[AR] in the comments
Ingredients

1 cup bulgur
1 medium diced onion
1 tsp cumin
1 tsp all spices
1/3 tsp cinnamon powder
Lemon zest
1 tsp dried mint
Salt and pepper to taste

Stuffing
1/2 cup tvp
100g fresh mushroom
1/4 cup walnuts
1 small diced onion
1 tsp all spices
1/2 tap cinnamon
1 tbsp olive oil or coconut oil
Salt and pepper to taste

Yogurt sauce:
2 cups almonds
10 cups water
1/2 tsp xanthin gum
2 lemons juice
2 tbsp cornstarch

Method:

1. Soak the bulgur in 1.5 cups of water for at least 1 hour.
2. In a separate bowl, combine the spices with the diced onion. Mix well and add to the soaked bulgur. Knead the mixture until smooth and well combined. Add more water if needed to prevent the dough from drying out.
3. Pre-soak the TVP in hot water for 20 minutes.
4. Heat a pan over medium heat and add the oil. Once hot, add the onions and cook until softened. Add the TVP, mushrooms, and walnuts, along with the spices. Cook for 10 minutes, stirring occasionally.
5. Shape the Kubbeh by forming small balls of dough. Place a spoonful of the TVP mixture into the center of each and shape the Kubbeh around it, enclosing the filling.
6. Heat oil in a deep fryer or a pan. Deep fry the Kubbeh until golden brown.
7. In a small pot, boil the almond milk and stir until bubbles appear and the mixture thickens.
8. Add the fried Kubbeh to the yogurt sauce, and enjoy warm
