do any other pastry chefs make their own bday cake? 😆

being surrounded by cake almost every day and putting a lot of effort into other people’s cakes, i find that i just want something simple when it comes to my birthday cake. i never really have an idea on how i want the outcome to be, but just having fun w/ whatever comes to mind at the time of decorating & what i have in the pantry

this year its a black forest swiss roll (turned vertical) with a chocolate bear on top 🐻

we have to think of an appropriate garnish and make our own as part of these Special Diets assessments, so for this mousse I decided to add gluten-free chocolate soil for a ✨crunch✨ element which accompanied the mousse very well! by @isabellabakerina
