a little sweetness from my kitchen today. 🤎

RECIPE: no-bake kinder bueno hazelnut mini cheesecakes 🍫

creamy hazelnut filling, buttery chocolate biscuit crust, and a little extra chocolate on top. made with love. ♡

ingredients — makes 6

for the crust

* 150g chocolate digestive biscuits, crushed
* 55g unsalted butter, melted
* 1 tbsp Nutella

for the filling

* 250g full-fat cream cheese, softened
* 150ml heavy whipping cream, chilled
* 80g powdered sugar
* 100g Nutella
* 1 tsp vanilla extract
* 40g roasted hazelnuts, finely chopped

for the topping

* 100g Nutella
* 100ml heavy whipping cream
* 1 tbsp powdered sugar
* 3 Kinder Bueno bars, cut into pieces
* chopped roasted hazelnuts
* chocolate shavings (optional)

how to make ♡

1. crush the chocolate biscuits into fine crumbs. mix with melted butter and Nutella until combined.
2. divide the mixture evenly between six lined muffin tin cavities. press firmly to create the crusts and refrigerate for 15 minutes.
3. in a mixing bowl, beat the cream cheese, powdered sugar, Nutella, and vanilla until smooth and creamy.
4. in a separate bowl, whip the chilled heavy cream until stiff peaks form. gently fold into the cream cheese mixture.
5. spoon a little filling over each biscuit crust. add a small swirl of Nutella and sprinkle with chopped hazelnuts.
6. cover with the remaining cheesecake filling and smooth the tops.
7. refrigerate for at least 4–6 hours, preferably overnight, until completely set.
8. carefully remove the cheesecakes from their molds. slightly warm the remaining Nutella and spoon it over each cheesecake, allowing a little to drip down the sides.
9. whip the remaining heavy cream with powdered sugar until stiff peaks form. pipe a soft swirl onto each cheesecake.
10. finish with chopped roasted hazelnuts, chocolate shavings, and a piece of Kinder Bueno on top.

serve chilled & enjoy. 🤎

a little messy, a little sweet, and absolutely worth making.

bisous, hana. ♡
