Inspired by MK’s Moist Coconut Cake Recipe :) I have only made a few cakes in my life so I am learning just like y’all! Cake—2 1/4c flour1/4c cornstarch/corn flour1 tbsp baking powder1/2tsp salt (if using salted butter, do 1/4tsp salt)1/2c unsalted butter3tbsp vegetable oil1 2/3c white sugar3 eggs1.5tsp vanilla extract1 tsp coconut extract1/2 tsp almond extract (unnecessary but I like it!)1 1/4c canned coconut milk1 cup shredded coconutPreheat oven to 325 and grease the bottom and sides of two 8in cake pans. Line the pans with parchment paper as well. (Don’t make my parchment paper mistake lol. Just line the BOTTOM of the pan with it!!!)In a separate bowl, mix flour, cornstarch, baking powder and salt. Whisk until well combined.In a large bowl or stand mixer, add in your butter, veggie oil and sugar. Cream for at least 2 minutes, until lighter in color. Add in eggs one by one, mixing between each egg.Add in vanilla, coconut extract, almond extract & a half cup of the coconut milk. Mix until well combined. After this you will no longer be using your stand mixer!Add in half of your wet ingredients to your dry mixture and fold in until just combined. Add in the remaining 3/4 cup coconut milk and fold in until just combined. Next add in the rest of the dry ingredients & fold in. Be careful to not over mix!Fold in the shredded coconut and then distribute the batter evenly into two 8in cake tins. Bake for 35 minutes or until the toothpick comes out clean. After baked, let the layers cool in the tins for about 15-20 mins and then take them out and allow to cool completely before frosting.CONTINUED IN COMMENTS🥥
If you like a sweet snack in the summer time, these Strawberry Shortcake Rice Krispies are perfect! They are simple to make, but with a fun summer twist! 6 cups Rice Krispies cereal12 oz bag of marshmallows4 tbsp unsalted butter1c freeze dried strawberries *I didn’t use a specific amount really, just as much as I wanted 😊*2.5 bags of Ghirardelli white chocolate wafer meltsAngel food cake globs 😇 (skip this step if you want to make the recipe GF!)Grease your baking pan and set aside.In a large microwave safe bowl, add butter & marshmallows. Microwave for about 60 seconds and then check. If the marshmallows have puffed up and butter has melted, take it out and stir. Pour in the Rice Krispies and mix. Next, crumble in freeze-dried strawberries and the crumbled globs of angel food cake. Mix well and pour into pan. In another bowl, microwave the white chocolate wafer melts in 60 second increments. Mix between each melt. Keep doing this until all of the chocolate has melted. Set aside for a few minutes to cool down. Once the chocolate mixture has cooled a little, add a small amount of red food coloring until you get your desired pink color. Pour over the rice Krispy treats. In a second, smaller bowl, add the remaining half bag of the white chocolate wafers and repeat the process. Set aside for a few minutes to cool down. After the pink chocolate has been poured, get an icing tool and dip it in the white chocolate and drag around the pink to make whatever design you want. I chose to make it pink marble, but there’s so many choices! Place the whole pan in the fridge and let cool for at least 30 minutes to completely set.Remove from the fridge, slice and enjoy! 🍓#summerrecipes #ricekrispies #strawberryrecipes

A lot of you asked, so I tried my hand at a carrot cake recipe just in time for Easter, and it was GIVING🥕 I followed @preppykitchen’s recipe but did a couple things differently. Recipe is below so you can make this for your Easter weekend plans!CARROT CAKE Ingredients for the cake:2½ cups all purpose flour 2 tsp baking powder 1 tsp baking soda 1 tsp salt 1 tsp ground cinnamon ½ tsp ground nutmeg 1⅓ cup vegetable oil1 cup packed light brown sugar 1 cup granulated sugar 4 large eggs 2 tsp vanilla 3 cups grated carrots 1 cup chopped pecans (I decided to use a mix of chopped pecans and chopped glazed walnuts!)Ingredients for the frosting:1 8oz block cream cheese room temperature 1 cup unsalted butter softened1 tsp vanilla extract4 to 5 cups powdered sugarI added some cinnamon + nutmeg to the frosting as well. Taste it as you go to determine how much you want to use!- Preheat the oven to 350°F. Lightly grease two 9-inch round cake pans with baking spray or butter, and line the bottoms with parchment paper.- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.- In a separate medium bowl, whisk together the sugars, oil, eggs, and vanilla until well combined. Pour the wet ingredients into the dry mixture and stir together just until combined and only a few streaks of flour remain.- Fold the carrots and nuts into the batter. Divide the batter evenly into the prepared pans.- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake layers to cool completely in the pans set on a wire cooling rack. Once cooled, invert the layers and remove the parchment paper.RECIPE CONTINUED IN COMMENTS🥕

It is so important❤️I recently went on my first undercover op with SOSA (@sosatogether), a nonprofit that works with law enforcements to identify and apprehend online child sexual predators. SOSA originally had a show called Undercover Underage on Max, which is how I found them, and contacted them to get involved.I have been that victim on the internet and in person SO many times and now that I am older and have nieces that age, it hit me how much something NEEDED to be done. Even though the show is no longer being filmed, SOSA’s work continues and I have found an additional purpose working with them. It means so much to me that I am now a donor, a volunteer, and a member of their advisory board🫶SOSA is run by @roo_pow, an amazing woman who is sometimes referred to as the second real life Olivia Benson— after the character my friend Mariska plays on SVU! Roo was even undercover as a buyer of CSAM— legally known as child pornography, which is as you can imagine, (but please don’t) the most haunting job. Child abuse, exploitation, sex trafficking are growing at lightning speed, and the world hasn’t caught up with how dire the situation is. Roo and the team have been working with law enforcement to arrest these predators and have been so effective. Up to now, their conviction rate has been 100%. During my first op, SOSA was able to arrest 7 men and get warrants for more. The time and effort that goes into creating these decoys is incredible. I was in awe of the blood, sweat and tears that they put into what they do. They experience the worst of the worst to be able to take as many predators as possible out of the lives of victims— and potential victims. Their dedication is endless. I’d be so grateful if you would share this post because it is SO important to raise awareness for parents AND kids to understand how serious this is. SOSA relies on donations to be able to do these ops and pay for the therapy they provide for the victims. They’re a small but mighty organization! Made dinner for Luke’s parents the other night and it was so good. Recipe below! 🐟🤩Teriyaki Salmon:King Salmon FiletsStonewall Kitchen Garlic Teriyaki Sauce (for Luke + parents!)Sweet Teriyaki Sauce (for me)Fried Rice: Gimmie Some Oven’s Recipe2c cold *see note* white rice2 Scrambled Eggs1 Onion3 Garlic cloves2 Carrots (I was short on time so I did frozen but fresh diced is always better!)Frozen PeasSoy SauceOyster Sauce or Hoisin SauceSaltPepperButterBroccoli:Broccoli FloretsAvocado OilToasted & Regular Sesame oilRice VinegarSoy SauceSaltPepperGarlic PowderOptional: Crushed Red Pepper**Fried rice is typically made with cold, leftover rice but this recipe is a great way to make it if you don’t have leftover rice!*Salmon:Unwrap salmon and pat dry. Use tweezers or a deboning tool to remove the bones. Salmon bones are hard & easy to feel. The easiest way to find them is towards the middle of the salmon filet because they poke out. I also check the fleshy top to be sure there’s none hiding in there.Cut your salmon into your desired size filets. You can make your own teriyaki sauce if you prefer, but my favorite two are above! Pour a little of your teriyaki sauce over the salmon and rub. I like to leave the marinade on for about 10 minutes. You don’t want to leave it for a long time because the salmon can get soggy! I typically like to oven bake salmon, but we grilled this time and that was great too. If you bake in the oven, don’t put the salmon on foil or a greased bottom. Luke and I don’t like the skin and the easiest way to get it off is to let it stick to the bottom of the baking sheet!If oven baking, bake at 400 until the internal temperature reaches 135 or desired temp. If grilling, grill on high for about 20 mins with the hood closed, flipping it about every 5 minutes. Re-lather the salmon with the sauce every 5 minutes. The timing really depends on how thick your salmon filets are. Keep an eye on them and use your thermometer to check the temp! Salmon should be flaky, not firm!Heat some of the leftover teriyaki and keep it to pour on top of your assembled bowl!CONTINUED IN COMMENTS
