Well, the baby child is officially in business!

She’ll be serving organic cold-pressed juices, performance smoothies, functional mushroom mylk blends, house-made plant milks, La Buena Paleta ice pops, house-made nutrition bars, and yes, obviously we'll have cold pressed pure celery juice! Everything will be available for preorder, pickup, or delivery. Come say hi, show us some love, treat yourself, and follow your bliss!

Every great event starts with passed appetizers, or bocas as we call them here in Costa Rica. These are always fun, creative, and, of course, delicious. Some events move into individually plated or family-style dinners, while others keep the bites coming until they become a meal in themselves. Every menu is customized to your tastes, your vision, and the vibe of your event. What's your vibe? by @jameskelly_cr

Working on a new website and came across this portrait by my friend and talented photographer Meghan. I look way more serious than usual (definitely not my style ), but I like the shot and wanted to share it. Thanks, @meganmccullor_photography by @jameskelly_cr

Erewhon Kale-Avocado-White bean salad
(serves 4 as a side or 2 as a main)

Ingredients

Salad:
• 1-2 bunches curly kale (about 6 cups), washed, dried, stems removed
• 1 (15 oz) can organic white kidney beans, drained, rinsed, strained
• 1 ripe avocado, diced into 1/2 inch cubes
• 1/2 cup seeds (pumpkin, sunflower), toasted until fragrant, cooled
• 1/4 cupped hulled hemp seeds

Dressing:
• Juice of 1 large lemon (or 2 small), about 3 Tablespoons
• 2 tsp Dijon mustard
• 1 Tbsp maple syrup
• ¼ cup extra-virgin olive oil
• 1 small garlic clove, minced
• Sea salt & freshly cracked black pepper

Instructions
• Prepare the kale: Remove the kale stems, roughly chop the leaves into bite-sized pieces

In a small bowl or processor, whisk or blend together lemon juice, Dijon, maple syrup, garlic, salt & pepper, and then slowly mix in olive oil until smooth and emulsified.
• Place the chopped kale in a large bowl. Drizzle about half of the dressing over the kale and with clean hands massage the leaves for a couple of minutes until the kale softens and darkens in color. Don't be nice baout it either, squeeze that shit like it owes you money, you wanna break it down.
• Assemble: To the massaged kale add the drained white beans, diced avocado and the seeds.
• Dress & toss: Pour 1/2 of the remaining dressing over the assembled salad and toss gently to combine everything. Taste and adjust salt/pepper and dressing to taste.
• Serve: Best served right away so avocado stays fresh and seeds stay crunchy but it will keep in the fridge for longer than you think. If making ahead, you can prep kale ahead, but add avocado, seeds and final dressing just before serving.
