72 hours in France to celebrate being 50.

Started at The Eagle (of course).
Paris: @bouillonchartier & @restaurantletrainbleu
Lyon: @brasseriegeorges_ & @cafecomptoirabel
Nice: @lamerendanice & Nice market.

Over time I’ve become less interested in innovation and newness and more interested in tradition and ritual (did I mention I’m old) and the bouillions, brasseries and bouchons are where I wanted to be. It’s as much about the rooms as anything else but swimming in the Med under 24* sunshine matters too. by @jameswhetlor

Warm berry compote, straight off the Grill.

Frozen berries, sugar and a splash of water turn into a rich, glossy sauce over the embers in minutes. Pour it over ice cream, pancakes, or a warm sponge cake. by @jameswhetlor

Cake. Over fire.

James is baking a soft, buttery Pan Dulce today, topped with fresh raspberries, all done over wood fire on the Asado Grill.
Dough goes in soft. Comes out fluffy and golden. Finished with a warm berry reduction made straight on the grill.

Whole fish, cooked simply over embers.

There’s something to fresh Grey Mullet, slashed and laid straight onto the coals. A few small touches make it effortless:

Slash the flesh so the heat moves straight through, leaving the skin perfect.

Roll the fish towards you when you turn it, so the belly stays whole.

Sear over hot embers, then raise the grate and let it finish gently.

Serve with charred leeks, toasted almonds, fresh parsley, and grilled lemon. A simple feast, straight off the fire.

Crispy edges, soft centre, and just enough chorizo oil to coat every potato.

@jameswhetlor is turning a simple side into the thing everyone reaches for first. Chorizo rendered until the oil runs orange, potatoes turned until they catch colour on every side.

This is the kind of dish that quietly steals the show at a feast. Full recipe on our YouTube channel. by @jameswhetlor

Typical Scottish Weather. One minute we had rain and then full sunshine but it didn’t stop @jameswhetlor from putting on a show! From start to finish that man did us proud!

@jameswhetlor cooks pork neck, slow-grilled until the fat renders and the edges char. Paired with a hearty @boldbeanco side.
Gather your friends, light the fire, and settle in for a proper weekend cook.

The Times called it. We already built it. 🔥

People are done with restaurants. Too expensive. Too forgettable. They want fire, provenance, and evenings that actually mean something.

Dining in Plain Sight is exactly that; a glass marquee, open skies, and open-fire cooking rooted in British provenance. We work with incredible chefs like @jameswhetlor , travelling Head Chef of @rivercottagehq (celebrating 20 years of exceptional food this year ).

Seasonal. Local. Entirely tailored to you.

Up to 80 guests
Open-fire at its heart
Independent, artisanal producers
Lantern-lit, sky above, landscape all around

“My senses were dancing before I even walked into the marquee.”

That’s not a restaurant. That’s an experience.
