A restaurant is only as good as the people crazy enough to show up every day and make it happen. I’m incredibly lucky to have these two beside me — Kat and Chris. They are the ones who help turn the ideas in my head into something that actually makes it onto the plate… and, occasionally, remind me that some of my ideas are probably terrible. We cook, we argue, we laugh, we problem solve, we get our asses kicked, and somehow we keep coming back the next day. They care deeply about the food, about the restaurant, and most importantly, about the people standing next to them. Serre wouldn’t be what it is without these two. I’m incredibly grateful for their talent, their commitment, and their willingness to put up with me. by @jonasoffenbach
@themakerhotel’s @serrerestaurant in the Hudson Valley is housed in a glass conservatory surrounded by luscious greenery. The restaurant — which means "greenhouse" in French — is run by executive chef @jonasoffenbach. It’s where people can get French food from a chef who is self-taught in French cuisine. @adrianadiaz has more for #TheDish. #french #food #hudsonvalley by @jonasoffenbach

A vintage cookbook collection + a focus on simplicity became the focal points for The Dishing’s feature shoot with Chef Jonas Offenbach @jonasoffenbach at the newly minted Serre Restaurant in The Maker Hotel. Chef brought in some of his book collection and talked through his vision for Serre, noting:“it’s deeply personal because it’s the culmination of everywhere I’ve cooked, traveled, and learned over the course of my career.” Of Serre, he adds: “[T]he restaurant isn’t interested in recreating the past or adhering to a rigid definition of what French cuisine should be. We focus on exceptional ingredients, thoughtful technique, and dishes that allow each component to have a purpose. Rather than layering flavors endlessly, we’re often asking ourselves what can be removed and how we can make an ingredient speak more clearly.” @citrusforward shot with Chef Jonas in the kitchen, library and dining room of ‘Serre’—the French word for greenhouse—where he weaves a connection between intentional cultivation and his culinary approach. And we had the added benefit of collaborating on this feature with Hudson Valley content creator and art director, Dimity Jones. 🎬 Reel: @dimityjones 📸 Photography: @citrusforward ✍️ Interview: @susiedp 📍@serrerestaurant 📌 @themakerhotel, Hudson, N.Y. —————————————————————————— 🫒 TheDishing.com is a different kind of dining guide connecting people and places with trusted intel + in person events.
