MEMBER MONDAY: Meet @bocodrinks Bo&Co is an organic syrup brand founded by Karin, who has spent more than ten years in the organic syrup industry and also distributes an international organic syrup brand across the Benelux. That experience led her to create a locally produced brand tailored to the taste, quality and needs of the Dutch market. The syrups are made in Amsterdam at the Amsterdamse Frisdrankfabriek. The fruit is pressed and processed without being concentrated to keep its full, natural flavour, while light botanical extracts from flowers and herbs add aromatic top notes. Everything is organic, free from artificial flavourings and colourings, and bottled locally in glass. The syrups work in lemonades, cocktails, mocktails, iced tea and other alcohol-free drinks. We like how Bo&Co keeps its supply chain short and transparent, with local production and organic ingredients at every step. You can find their syrups at hospitality venues, cocktail bars and wholesalers, and they are also available for home use. Proef hoe mooi en puur natuur kan zijn. 🌿 by @kitchenrepublicnl
Lema and Thomas were both born in Reims and have known each other for seventeen years. When they moved to Amsterdam, they built their first business around a dish they grew up with: pâté en croûte. In Reims, it is a Saturday tradition, eaten after the market at a long table with family and friends. Their recipe stays true to the original from Champagne, with veal and pork marinated for 24 hours, alongside variations of their own. The pairing they recommend: a chilled glass of Champagne. We had a lovely day with them at the MC kitchen. ‘The Police’ was playing non-stop on Thomas’s Spotify playlist in the kitchen, so the choice made itself. We think you make one of the best savory pies in town. Thank you for sharing this tradition with us! See you at the next market or at the Tweede Hugo de Grootstraat @maisonchampenoise 🥧 by @kitchenrepublicnl
MEMBER MONDAY: Meet @drinkvyvo VYVO was founded at the end of 2025 by Scott Ammerlaan and Sebastiaan Roebroek, who produce sparkling functional drinks in Amsterdam. Each can contains natural caffeine, vitamins and electrolytes, and no sugar or sweeteners. The 70mg of caffeine comes from guarana and green tea, roughly an espresso, alongside L-theanine, B vitamins, vitamin C, magnesium and sodium. We are proud to announce that VYVO won the innovation pitch at Horecava shortly after launching and now supplies caterers, offices, healthcare organisations and universities. Altijd zonder suiker. Altijd zonder zoetstoffen. 💚 by @kitchenrepublicnl
MEMBER MONDAY: Meet @notjustpretzels 🥨 Not Just Pretzels was founded by Kevin and Noemi, who moved to Amsterdam four years ago and found the city lacking in one respect. Noemi grew up in Baden-Württemberg, where fresh pretzels were a daily fixture. Kevin was born and raised in Bavaria. For a while, they compensated by stocking up on visits home to their families. Two years ago they started baking their own instead, testing recipes in their kitchen until the results matched their expectations. The hobby turned into a business. Noemi and Kevin now bake handmade German-style pretzels in Amsterdam, crisp on the outside and soft inside, with the dark chestnut crust the style is known for. The range covers the classic with pretzel salt, versions with butter or cheese, and a rotating set of newer varieties. by @kitchenrepublicnl

MEMBER MONDAY: Meet @byun.nl 🍙 BYUN makes onigiri, the Japanese rice ball that has been a staple of lunchboxes and convenience stores in Japan for generations and is still relatively unfamiliar in the Netherlands. The appeal is practical. Onigiri travels well, needs no cutlery and works as a proper meal rather than a filler, which makes it a natural fit for people eating between meetings, on a commute or at a desk. BYUN pairs that format with flavours that move between traditional fillings and newer combinations. At Kitchen Republic, BYUN is introducing Amsterdam to a format that much of the world already eats daily. 🌿 by @kitchenrepublicnl
MEMBER MONDAY: Meet @biklfoods 🥒 Bikl Pickles began in 2020 with a handful of homemade pickles from a vegetable garden. Founders Arend and Bert have built the operation into a supplier of pickled, brined and fermented products for the Dutch hospitality sector. Tjebbe joined in early 2025 to build on that groundwork, with the task of introducing as many chefs as possible to pickling, brining and fermenting. As kitchens come under pressure to work more efficiently, chefs have less time to develop depth of flavour from scratch. Bikl positions its range as a shortcut that does not compromise on quality, on the argument that acidity, freshness and fermentation are often what separate a competent dish from a memorable one. 💚 by @kitchenrepublicnl
MEMBER MONDAY: Meet @maisonchampenoise 🥂 Maison Champenoise was founded by Lema and Thomas, who both grew up in Reims in the Champagne region of France. With a background in hospitality, they moved to Amsterdam to introduce the food and drink of their home region to the city. The company’s main product is the pâté champenois, a savoury pie with a flaky pastry crust that is common in Champagne but rarely found in the Netherlands. The pies are sold alongside a selection of grower champagne from small family producers. Among them is Champagne Bertrand Vallois, a Premier Cru house in the Côte des Blancs that has been run by the same family for three generations. Maison Champenoise is currently the only place in Amsterdam that serves and sells it. Customers can visit the shop on Tweede Hugo de Grootstraat or order online for pickup and local delivery. The company also provides catering, borrel boxes and gift boxes for offices and private events, and supplies bars and cafés that resell its products. by @kitchenrepublicnl
