I don’t believe hunger and appetite are synonymous. Hunger asks whether you’ll eat. Appetite asks whether that’s all you’re hungry for.

If having a meal were only about satisfying hunger, restaurants would have little reason to exist in the form they do today. Instead, we’ve created spaces that carefully consider atmosphere, pacing, conversation, beauty, and memory alongside the food itself.

This distinction between eating and dining is only one expression of something much larger. What we build isn’t only revealed by what it produces, but by what it refuses to leave ordinary.

Hospitality is one of those refusals. It is the embodiment of possibility through service. As an industry, it refuses to believe that meeting a need is the end of the experience. Instead, it begins where necessity ends—taking the ordinary and dignifying it beyond the point of survival into the territory of what is deserved.

The challenge is that hospitality is often judged by its least ordinary expressions. It is much easier to notice it when it’s extravagant. Over time, the most visible examples can become the definition of the whole, quietly suggesting that thoughtfulness itself belongs to another tier of life. The greatest distance isn’t always between a person and their access to an experience. Sometimes it’s between a person and the belief that ordinary moments aren’t worthy of that kind of care in the first place.

Yes, some expressions of hospitality are genuinely expensive, and there will always be experiences that remain financially out of reach. But luxury has never held a monopoly on intention. The philosophy survives at every scale. It simply gives form to desires that have always existed because those desires have always been deeply human.
