As we’ve got a few spots left for Thursday, I thought I’d share a little sneak peek of what’s cooking 😊

It was a lot of fun creating this menu — I love Southeast Asian flavours and couldn’t resist bringing them all together in one plant-based menu 🌱

Join me this Thursday at The Dempsey Project for a one-night-only pop-up dinner showcasing my favourite kind of food. Hope to see you there 💚

Jumping on this trend because… why not? 😊

Years ago I never imagined I’d be where I am today. Grateful to still be enjoying the journey 🙏❤️ by @littlegreenkitchen.sg

Last week, I had the honour of stepping into one of Bangkok’s five-star kitchens — not to cook for guests, but to empower the chefs who do.

I delivered a 3-day immersive plant-based culinary training for the kitchen team at the Jubilee Prestige hotel, designed to help them craft meals that are nourishing and different! We explored:
🌱 High-protein plant-based dishes that truly satisfy
🌱 Smart egg substitutes that do not compromise on flavour
🌱 Indulgent plant-based desserts
🌱 Powerful whole-food sources

The highlight? We ended the training with a plant-based MasterChef competition 🏆 — where the chefs had to showcase everything they’d learnt. The creativity, the passion, the flavours… I was blown away. These chefs didn’t just absorb the techniques, they made it their own.
This training program wasn’t about restriction. It was about showing the team that plants can be the star of the show. 🌱✨
And watching these chefs light up as they discovered new techniques and pushed themselves to new heights? That is exactly why I do the work I do 😀

Pasar to table is back for our third installation! Next month, we celebrate Deepavali in Singapore, also known as Diwali in the Sindhi community.

Join us and Chef Shalu of @littlegreenkitchen.sg for a cook-and-dine workshop, with her favourite home-style Sindhi dishes! And in all pasar-to-table style, ingredients will be sourced from Chef Shalu's favourite wet market at Jalan Tua Kong 🎉

I just wrapped up a 2-day plant-based training with the kitchen team at Mövenpick BDMS Wellness Resort Bangkok, and enjoyed every minute 🌱😊

Ten chefs, two days, one goal: giving every guest — no matter their preferred diet or dietary restrictions — something on the menu they’ll genuinely love. We worked through plant proteins, egg substitutes, plant-based desserts, and bold sauces that delivered using only whole food plant-based ingredients.

What I loved about it was how interested and committed this team was. Not just ticking a box for “plant-based options,” but really wanting to understand the how and why — so they can adapt on the fly for whatever comes in through the kitchen door, whether that’s a vegan request, a nut allergy, or a guest who just wants a genuinely healthy and delicious meal.

Every hotel and team has unique needs, so every training is different too. I get to design something specific, work alongside the kitchen team, and help them get exactly where they want to go. And doing it at a place like this — surrounded by lush grounds, proper fitness facilities (including a running track!) with a complete wellness vibe - well, that was the icing on the cake!

Grateful as always to be able to do the work I do 🙏🌱✨

So many of you replied to ask for the recipe of my High protein, low sugar double choc muffins so am posting it here ❤️

Enjoy baking and happy weekend! 😀

Ingredients:
1 cup almond milk
1 tsp apple cider vinegar
1 cup buckwheat flour
1/2 cup almond flour
1/2 cup unsweetened cocoa powder
1/3 cup brown sugar
1 tsp baking powder
1/2 tsp salt
1/3 cup olive or avocado oil
1 banana, mashed
1 tsp vanilla extract
1 flax egg (1 Tbsp ground flax mixed with 2 1/2 Tbsp water or almond milk)
1/2 cup dark chocolate chips

1. Preheat oven to 180 degrees C. Line a muffin pan with liners and spray them lightly with oil.

2. Combine almond milk and apple cider vinegar in a cup and set aside to curdle. This is your vegan buttermilk.

3. In a large bowl, whisk together flours, cocoa powder, sugar, baking powder and salt. Add buttermilk, oil, banana, vanilla and flax egg into the dry ingredients. Stir gently but don’t overmix.

4. Fold in chocolate chips and fill muffin cups 2/3 full.

5. Bake for 22-25 minutes, until a toothpick inserted in the middle comes out mostly clean. Let them cool for 5 minutes in the pan, then transfer to a cooling rack. Enjoy with your favourite cuppa ☕️ 😀

I just got back from a week in Croatia and absolutely loved it 🇭🇷
One of the most beautiful countries I’ve been to but also some of the hardest plant-based hunting I’ve done in a while🌱
Croatia is seafood country, through and through. Most coastal menus are built around the day’s catch — and plant-based diners are often an afterthought. And when there is a vegetarian option, a creamy pasta is almost always the default. Plant-based food takes more digging but when you find the right places, it’s so worth it 👇

📍 Dubrovnik
🍽️ @pepperseatery — so lucky to have discovered this right next to our hotel! Japanese-Italian fusion with big, bold flavours and lots of spices. Best tofu tacos and shitake bao bun 😋Not what I expected to find in Dubrovnik’s old town, but it was a great start to our trip 😊

📍 Korčula
🍽️ @silkizakaya — Much harder to find vegan food in Korcula so Silk was a godsend. A pan-Asian fusion and izakaya spot on the promenade with an absolutely stunning view. Sushi, curries, and some of the best crispy tofu I’ve ever had.

📍 Split
It was surprisingly easy to find vegan options in Split but these 2 really stood out.
🍽️ Barakocula — Right in the city centre with a gorgeous courtyard, and solid, wholesome plant-based dishes like sushi and beetroot sliders.
🍽️ @pandora_greenbox — This restaurant was next level in terms of creativity, flavours and presentation👌. My favourite of the lot - Smoked tofu sliders and polenta crusted tempeh was just outstanding.
☕ Kokantun — Had to throw this in as the best proper coffee of the trip with oat milk!

And don’t forget to wash it all down with a glass of Pošip or Grk — the local Croatian whites that pair so well with plant-based food 🍷🌱

Save this post if you’re headed to the Dalmatian coast!

I’ve been a bit quiet on here… but the kitchen well, quite the opposite 😅

It’s been one of those full, slightly chaotic, very satisfying periods — and excuse the long post as I share what I’ve been up to 😊

I launched a couple of new classes — Mediterranean home cooking, Japanese favourites and Plant-based Pasta — and I’ve been really happy with how they’ve been received. As always, the idea is simple: take the classics you already love, make them a bit lighter, a bit healthier, and doable enough for everyday cooking (not just “once in a while” meals).

The helpers series was such a highlight. So much enthusiasm, laughter, and proper techniques — the kind that sticks. Watching that confidence grow is always the best part 🔪

There were some really special one-offs too — a vegan Indian private dinner for a client’s husband’s 50th (with a few Sindhi dishes in the mix 🙂), and a kids cooking class over Hari Raya with a group of enthusiastic little chefs… loud, messy, and completely joyful.

And then a moment I didn’t expect — reconnecting with a student after ten years. She reached out and found her way back, which honestly means a lot more than I can explain ❤️

So yes… it’s been busy. In between all of that, I finally got my new website up (about time 😅), and am now gearing up for a really exciting project in Bangkok ✈️

If you’ve been meaning to join a class, or you’re just curious about making plant-based food work in a real, everyday way, DM to say hello 👋
Always happy to chat 🌱 by @littlegreenkitchen.sg
