🌱🌶️CRISPY KOREAN GLAZED TOFU🌶️🌱

This plant-based dish came about by accident. We had a block of tofu to use up, it had been in the fridge for about two weeks and its use by date was fast approaching. I'd uhhmed and ahhed over what to use it for but never quite decided. I knew it was going to involve the dregs of our jar of gochujang paste, but that was as far as I'd got!

Then, the brilliant @jillymccordcooks posted a gorgeous-looking Korean chicken burger with a spicy glaze and I knew I was going to have to try the glaze recipe (and, at some point, the chicken recipe!)

📌 Make sure and save this to come back to (hit the 🔖 button), and go check out Jilly's highlight for the chicken recipe if that's your bag too.

🌱 Drain, dry and press your tofu. You don't have to press it, but we prefer the texture of it. I normally wrap some kitchen roll around it and put it on a plate, pop another plate on top and then a cookbook or two on top of that to weigh it down for at least 30 mins.
🌱 In a bowl, mix together 2 tbsps cornflour and 1 tsp Chinese five spice. Cut the tofu into bite-sized chunks and add to the bowl, then toss it all together until the tofu pieces are evenly coated.
🌱 Heat 2 tbsps vegetable oil in a non-stick frying pan over a medium heat. Once it's hot, add the tofu chunks and fry until crispy. You'll need to turn it a few times to get each side crispy, then drain it on some kitchen paper once it's done.
🌱 Meanwhile, in a saucepan, mix together 2 tsps soya sauce, 2 tsps gochujang paste, 1 minced garlic clove, 1 inch of grated ginger, 2 tsps honey and 1 tsp chilli jam. Heat until it's a sticky glaze, then brush or pour it over the tofu and serve.

We had ours with rice and green beans, and garnished with sliced spring onion and some Everything bagel seasoning (we had run out of sesame seeds on their own, but this worked really nicely!).

Hope you love it if you make this! Thanks @jillymccordcooks for the glaze inspo. by @lunches.and.leopardprint

Props to @marksandspencerfood and my wife for this evening's fun dinner. Featuring mini burgers, spooky chicken bats, wiggly worm sausages, pumpkin bao and fries.

We're off to a Halloween party with friends tomorrow so tonight was our family celebration of everyone's favourite reason to wear fancy dress and eat sweets 🙌🏻

POV: sweater weather has arrived with a bang (and lots of rain and wind). Slow cooker reporting for duty! Anyone else cracked out the cosy recipes these past few days to accompany storms Austen & Boelo?

Takeaway without the price tag? Deal me in! (ad)

Thanks @quorn_uk for sending over your Takeaway range so we could create a feast!

We enjoyed a weekend fakeaway banquet of Quorn Quarter Pounders, Quorn Crunchy Fillet Burgers and Quorn Salt and Pepper Tenders, served with a range of sides and the all-important dips (ranch went really well with the tenders!).

Everything was a huge hit: the kids especially loved the tenders, and I devoured my crunchy fillet burger.

This spread was so quick and easy to prepare, I air fried some bits and oven baked the rest 👌🏻 This was such a fun way to enjoy a meal together without spending ££ on a delivery app.

The Quorn Hot & Spicy Bites are on the menu for this week and I can't wait 😍

Which would you pick first? by @lunches.and.leopardprint

POV: your latest order of the brownies that have had you in a chokehold since 2020 has arrived 😍😍😍

Guys, there's a reason I never miss an @adventurouscakebook order book drop. These are the most delicious, fudgey and HEFTY brownies ever! Oh and also they're 100% plant-based 🌱🌱 we're not vegan, but sharing this important info if you are!

Our postwoman couldn't believe it when I told her it was brownies as she handed over the box, because it was so pleasantly heavy. Turns out it was a little heavier because the utter superstar baking babe that is Alex (owner of @adventurouscakebook) had squeezed a Nanaimo bar in with my order. Absolutely too kind and so lovely: they always make me think of my late Mum and they're hard to find in the UK ❤️ plus, Alex's version are so good!

Anyways, we've eaten some, we've frozen some (pic 2 shows them ready to go), and I'll be keeping my eyes peeled as ever for the next time the order book opens. 👀👀 Alex can ship all over the UK. If you're lucky enough to be based in Sheffield, you can enjoy his bakes every week at the discerning cafés who are wise enough to stock his goodies (check his page to keep up with that!).

Make sure you try them when you can. They also make great gifts to send to people, which I've done a few times.

September roundup!
Firstly, this chicken bibimbap at my office was an actual delight.

@tracklements kindly sent me their latest Special Edition and it is a corker! (gift)

A great haul from a @tuckshopvendinguk and @wholemooworld stop with my daughter: she chose the @sinfullydeliciousuk brookie stack, I chose the @queen_of_tarts_bakes kinder brownie. Both were 10/10.

The kids tried their first Chinese takeaway, as an end-of-summer treat dinner.

Our besties brought me back my faaaaave chocolate bars from their holiday to 🇨🇦❤️

I ate a lot of salads al desko at home. This one was reallllly good.

I tried that lasagne one pot thing (where you break lasagne sheets straight into the pot of Bolognese sauce). A huge hit with us all!

We became obsessed with this @emthenutritionist recipe for lime & peanut chicken. If you haven't tried it yet, do. It's a banger.

My chocolate & cherry scone and mocha at @ntshugborough

Seasonal treats haul from @marksandspencerfood 👌🏻👌🏻

One of many @tamingtwins cottage pies that we'll be consuming over the 'ber months.

Greek chicken salad with double (harissa) chicken from @atislife_. Well worth the £17 and kept me going all day, on a very long day in Canary Wharf.

Another chocolate bar from abroad: we finally cracked into our precious @whittakersnz Coconut Block. Now it's gone, we need to arrange to see my sister again and replenish our stocks 😂😍

My wife made those baked beef kebabs you do on a baking sheet - really nice, esp. doused in garlic yogurt and that @sauce_shop honey sriracha that I'm obsessed with.

Made bone broth (/chicken stock if you were born in the 1900s 😉) from the first roast of the season and...

...turned it into this delightful cold-fighting soup with lemongrass, ginger and lemon juice in it when everyone was under the weather. Perfect with a @jasonssourdough roll dunked into it.

Train picnic. This sandwich is in my top 3 @marksandspencerfood sarnies. Nostril-flaringly hot horseradish and they do *not* skimp on the roast beef.

Chicken shawarma flatbreads for a quick Friday tea for the grown-ups. We tried the @maggi_uk shawarma air fryer seasoning for the first time, it's a really delicious short by @lunches.and.leopardprint

ad What a way to launch Taste Worcestershire! 🍴🥂

My wife and I got a rare night off parenting, so we were very happy to be let loose on the food, drink and general grown-up fun! 😂

We had such a brilliant evening at @therusticbewdley, celebrating everything that makes Worcestershire’s food and drink scene so good.

And the food… 👌 The Korean tenders and curried squash & chickpea pizza were particular highlights, but honestly, it was all banging and made with ingredients from the best local suppliers. Then there was @churchfieldsfarmhouse ice cream for pudding 🍦 (*loved* the pumpkin spice latte one!), plus an amazing gin school experience with @wildjacspirits.

We loved painting our own Wildjac glasses and designing our gin bottle labels too. And the goodie bag was *excellent*. Basically, we left very well fed, very well watered and with a rather impressive haul of local treats! 😂

Taste Worcestershire runs from **1 to 31 October**, with loads of brilliant offers from some of the best food and drink businesses across the county.

A few that caught my eye:

🍕 50% off pizzas at @no43winebar

🍔 25% off your food bill at @_burger__shop

☕ 15% off your bill on a weekday at @riseandgrind_bish

🥩 15% off food Fri & Sat lunchtimes at @madresfieldbutchersandgrill

And there are loads more, with new offers being added too.

Huge thanks to @visitworcestershire for inviting us, and to The Rustic Kitchen for being such brilliant hosts.

And a special shout-out to the gorgeous people I met as part of Team Apples on the night: @pershorepatty (at long last! And what a babe ✌🏻), @queenbeecomms , @samantha.muddy.stilettos and @life_of_riley2021. 🍎❤️

Great food, fantastic company, a night off parenting and some of the best suppliers in the region. Pretty perfect evening, really.

Finally got to check out @gandiesuk for brunch yesterday and oh my, it's a cracker! A perfect spot for a rare kid-free mate date with two of our faves.

I went for the "Ham I Right?": Gandies hash brown, grilled glazed ham, charred hispi cabbage, Worcestershire sauce butter, fried egg, pineapple hot sauce (quite 🔥 but really good with that salty ham) & crispy onions.

The hash brown was huge, golden and crispy; the ham was delightful, I would have devoured more of it, but thought this was great value for £13; and the hispi made the whole thing feel very virtuous for 10am and also a nice change from the usual brunch menu suspects.

Great coffee, too, and it's dog-friendly. We'll be back! (Probably with the kids and dog)

Never met a National Trust scone I didn’t like. This one was no exception. 🫖♥️

Scone of the month is chocolate 🍫 and cherry 🍒 A delight! Slathered it in @roddas_cream and @tiptreeofficial jam. Accompanied by great conversation and a lovely brew.

Thanks @ntshugborough for a grand day out.

POV: dinner has officially entered its bubbling era. 🥔🔥 Have you had a classic 'ber months meal yet?

I always use the cottage pie recipe from @tamingtwins, and proudly still use @hendersonsrelish (despite almost four years living in Worcester...)

PS - there's a cheese-less patch because we've somehow produced one kid who hates melted cheese. We're hoping he'll grow out of that lunacy.

My speciality: veggie breakfast, add sausage or bacon. This one at @toast_flyford was a corker 👌🏻

Trying to eat the rainbow during the week (and more avocado, to make my doctor happy. Life in your 40's...!)

S'mores, featuring excellent @lu.ukandi biscuits. Outstanding choice.

I made this amazing steak and chimmichurri salad for myself one evening and then thought about it for like a week afterwards.

Iced mocha at @magnoliasbarn - worth a visit!

And the hot chocolate of my little girl's dreams 😍

Lots of scoots and dog walks.

Frozen cocktails at @malvernspa on our very precious Mums' night away with pals.

Enjoying @hartleburycastle, one of my daughter's favourite places for a jaunt.

Highly recommend you track this down by @cornishsea_salt and use it on everyyyyything.

Tom Ford eclipse glasses 😂

A @pizzaxfreakz date with my gal ❤️

Treat for the kids from @baketin_worcester, who are my fave local bakers in Worcester.

Decent pokē bowl in my office canteen the other day.

Amazing BBQ some of our favourites treated us to.

A day out at @spetchleygardens, where we all loved their dragon quest event.

Will never let us be without this amazing @sauce_shop honey sriracha now. If you've not tried it, go get a bottle (or two).

Camping mini-adventure at @woodsidecountrypark

This is reallllly good. I bought it at @ntcroome, but visit your local @nationaltrust gift shop and buy a jar for everyone you know.

Finally cooked something proper for the first time in ages - lasagne, a sign that we're ready for the 'ber months. by @lunches.and.leopardprint

The ULTIMATE girl lunch:
👉🏻 Buttermilk fried chicken Caesar salad
👉🏻 Salty fries
👉🏻 A crispy Diet Coke
👉🏻 A perfectly chilled NZ Savvy B
👉🏻 Bonus: the most amazing view (swipe to the last slide to enjoy 😍😍)

Show this some ❤️ if it's also your perfect order.

Would drive the 3.5 hours back to @marinersinrock in a flash to have this again (and again). Thanks @paulainsw6rth @chefjoerozier and team for consistently excellent food, service and vibes, every single time we come to the Mariners. That's why it's my favourite pub anywhere 🙌🏻

Worth knowing that the Mariners is kid- and dog-friendly; scroll to check out what my kiddos picked. Booking recommended.

Looking forward to the next visit already (and hoping to check out @stenodoc too!)
