Banana Crumble Loaf Cake 🍌✨ Today’s bake was this soft, moist Banana Crumble Loaf Cake, finished with a simple powdered sugar glaze. 🍌 For the Banana Loaf * 250 g all-purpose flour (2 cups) * 10 g baking powder * 1 tbsp cinnamon * 1 tbsp nutmeg * 3 medium ripe bananas (about 300 g mashed) * 200 g sugar (1 cup) * 2 eggs * 100 g melted butter (about 7 tbsp) * 100 g vegetable oil (about 110 mL or ½ cup) * 5 g vanilla sachet (1 packet) * 120 mL milk (½ cup) ✨ For the Crumble Topping * 60 g flour (½ cup) * 50 g brown sugar (¼ cup packed) * 30 mL vegetable oil (2 tbsp) * ½ tsp cinnamon Baker’s note: I initially tried adding mashed banana to the crumble because I wanted extra banana flavor, but it made the mixture too wet and prevented it from forming proper crumbs. I had to start over, so I wouldn’t recommend adding banana directly to the crumble topping. 🤍 For the Glaze * 120 g powdered sugar (1 cup) * 15–30 mL milk (1–2 tbsp) Mix until smooth and drizzle over the cooled loaf. 👩🏽‍🍳 Method 1. Preheat the oven to 175°C. 2. Mash the bananas and mix with the sugar, eggs, melted butter, oil, vanilla sachet, and milk. 3. Add the flour, baking powder, cinnamon, and nutmeg. 4. Mix until just combined. 5. Pour into a lined loaf pan. 6. Prepare the crumble and sprinkle it on top. 7. Bake for 50–60 minutes or until a skewer comes out clean. 8. Cool completely and drizzle with the powdered sugar glaze. The combination of banana, cinnamon, and nutmeg made the loaf incredibly fragrant, while the crumble topping added the perfect crunch. The sweet glaze pulled everything together beautifully. 🍌🤍 I made this for my lovely nail tech today, and she absolutely loved it. ❤️✨ #BananaBread #BananaLoaf #bananacrumble #madamekake by @madame_kake
