Rosalie really wanted unicorn cupcakes; this is what I could make with what we had. 😅🫶🏼

For cupcakes
1⅔ cup all-purpose flour
1 cup granulated sugar
¼ teaspoon baking soda
1½ teaspoon baking powder
¼ teaspoon kosher salt
¾ cup butter, melted
3 egg whites room temperature
1 tablespoon vanilla extract
½ cup sour cream
½ cup whole milk
Few drops of blue food colouring

For icing
1 cup butter, softened to room temperature
3 cups powdered sugar (confectioners’ sugar), sifted
1 tablespoon pure vanilla extract
3 to 4 tablespoons heavy cream or whole milk, at room temperature
As many sprinkles as you want. 😆 by @madebybev26

One Pan Tortellini with Sausage

4 large Italian sausages
2 tbs of garlic
1/4 cup chicken broth
1 can diced tomatoes with Italian seasoning (use the juice too)
1/2 cup heavy/whipping cream
1 (9 ounce) package refrigerated cheese tortellini
1 cups loosely packed fresh baby spinach
Salt & pepper to taste
1 tbs of Montreal Steak Spice
1 tbs of Italian seasoning
1/2 Cup mozzarella cheese optional, to taste

Take the sausage meat out of the casings and crumble it into a skillet. Cook it over medium-high heat, stirring occasionally, until it’s browned. If there’s a lot of excess fat, drain most of it. Leave the sausage in the pan.

Add the garlic, Montreal steak spice , Italian seasoning, chicken broth, diced tomatoes, cream, and tortellini. Cook, uncovered, stirring occasionally, for 5-7 minutes or until the tortellini is cooked and the sauce has reduced to your liking. Cooking the tortellini in the sauce helps thicken it (it releases starch).

Stir in the spinach and Mozzarella cheese and let it wilt. Season with salt & pepper as needed. by @madebybev26

I may not be rich in money, but I’m rich in all the ways that matter. ❤️

I have a husband who will cook me breakfast just because, and daughters who are always right there helping out. 🥹❤️

Life isn’t perfect, and we definitely don’t have everything—but moments like this remind me just how lucky I really am. 🫶🏼

I’ve got a full house, a little chaos, and a whole lot of love… and honestly, I wouldn’t trade it for anything. ❤️🥰

I had this as an afternoon snack, it was so tasty 🤤
3 large boneless skinless chicken breasts, boiled and shredded
8 ounces cream cheese, cubed
1 cup ranch dressing, homemade or store-bought
1 cup hot sauce, (I used Frank’s RedHot), plus more as needed
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
½ cup green onion, chopped
1.5 cups mozzarella cheese, shredded, divided
1.5 cups cheddar cheese, shredded, divided

Instructions:
Preheat your oven to 350 degrees F. and spray a 9×9-inch baking pan (or approximate size) with non-stick cooking spray.
Warm the sauce. To a medium saucepot over medium-low heat add the cubed cream cheese, ranch dressing, hot sauce, black pepper, and garlic powder. Whisk constantly until the cream cheese has dissolved in the ranch and hot sauce. Remove from heat.

Combine. Add the cooked and shredded chicken, green onion, 1 cup of the shredded mozzarella cheese, and one cup of the shredded cheddar cheese to the sauce pot. Mix well to combine. Transfer to your prepared baking pan and top with remain mozzarella and cheddar cheese.
Bake. Bake for approximately 20-30 minutes, or until the cheese has melted and the sides are starting to bubble. Set oven to BROIL. Allow your buffalo chicken dip to cook for an additional 2-3 minutes, or until the top is golden brown. Remove it immediately.
Serve. Serve with tortilla chips, vegetable sticks, crackers, or enjoy leftovers wrapped in a tortilla with all your favorite greens

Apparently… I was spending too much money on iced coffees. 🙄😂☕

So my husband suggested I start making them at home…

And honestly? Challenge accepted. 😂🫶🏼

So welcome to my new little experiment: Made by Bev’s Iced Coffee Era. ☕✨

I’m going to try different recipes, different flavours, and see if I can make iced coffees at home that are actually GOOD enough to keep me away from the drive-thru. 😂

Today’s coffee? Cold Foam Iced Coffee-10/10. 👏🏼❤️

If you’ve got any good iced coffee recipes that I can try-send them my way! 🫶🏼
