fun entremet!!

my second entremet i’ve done as well as my second favorite! i absolutely love the way this turned out! to be honest im not a fan of the macaron shells on the side of the entremet that’s in the assembly instructions for this particular entremet, and i am so glad we ended up not doing it! i feel like the design i ended up doing fits so much better and it is so pleasing to look at!

the only thing i would fix about this is my good but bad glazing (you can tell on the front of the entremet where i swiped the excess glaze off of the top and it didn’t completely run off) but it’s something that i feel is pretty minor.

overall, not too shabby if i do say so myself

i also decided to include the macarons that i made! (ft. my awesome partner bibi’s to the left of mine)

entremet from bottom to top:
-crushed pistachio
-white chocolate and pistachio crunchy layer
-vanilla chiffon sponge
-strawberry cremeux
-white chocolate mousse
-vanilla bean white chocolate shiny glaze

my first entremet!! omg this was so much fun! i’m so so so happy with how this turned out! i was kind of nervous going into it because its so much bigger than a petit gateau (and i ending up having an issue with the glaze, dont mind the small print on the front of it), but after glazing it was pretty much smooth sailing from there!

the gold dusting on the chocolate plaques adds so much to the entremet, im so glad i ended up adding it. idk i just really like the design overall. i love everything about it. even the wonky quenelle😭 ive never made a quenelle with chantilly before so it was definetly something to work with.

not only does it look great (in my opinion) but it tasted great too! i love love love the crunch layer.

i think the most rewarding part of this was being able to see everyone’s and how they ended up decorating it!

sorry i don’t have any cross sections, but the description will be from bottom to top to garnishes!

this was soooo much fun! we also sold out so quick! thank you to everyone that came to visit me!!

i feel like this went very well! i feel like for our first buffet, having everything be the same flavor instead of several different ones really helped us ease into it. i’m very excited for the next one!

my practical for my cakes lab! i had so much fun making this cake! i really enjoyed making all of the gumpaste roses! it isn’t something that i have ever made or worked with previously, but i like how realistic they look in comparison to other types of roses that i’ve made!

overall, im really happy with how this cake turned out! it was so much fun to make, the only complaint i have is that i wish i made more leaves!

this lab was such a great experience, and i feel like i have learned so much! by @madebyhaleyy

i am SOOOO in love with this cake! it was my first time every working with fondant! after learning that the next cake in my lab that we would be making would be a 6 inch styrofoam gift box cake, i just knew i had to turn it into a succulent! you can still see the gift aspects of the cake (like the bow), but you can also see the plant aspects (the pot). i feel like the cake is a good mix of both!

this was so much fun to make! it was a bit difficult for me at first to work with the fondant (it was way too soft to enrobe the styrofoam because i added way too must food coloring) but after working through the obstacles, i ended up enjoying fondant much more than i anticipated!

i feel like the dirt really ties the cake together! i ended up using dried chocolate cake and i feel like it’s pretty indistinguishable from real dirt!

this is the final cake that i will be doing before my practical! by @madebyhaleyy

my last iced cake of lab before practical! i had so much fun with this cake! i really enjoyed working with modeling chocolate! it was a different medium from what i’m used to, but i found it really fun! it really helped me with working with gumpaste to make gumpaste roses!

first sheet cake in lab!

honestly, this has been my least favorite cake thus far. i just kept messing up lol. i wrote on the wrong side of the cake, my flowers are facing the wrong direction, etc. i also feel like the vibrancy of the purple really throws everything off on my cake, so if there were more vibrant colors i feel like i would like this cake a lot more.

it was very fun to do though! i have definetly learned a lot from this, and next time i will do better!!
