Also this was the year I got covid and lost my sense of taste and smell for at least a week and when I tell you the amount of psychic damage that caused… anyway.

this is a truly American sized chicken cutlet. my mom would make this super simple but delicious meal for us during the week when I was growing up - she called it chicken Santa clause, it was a one of those family lore names that came from a childhood colloquialism. Something about a Christmas time McNugget commercial - I remember coming home from school and smelling the frying oil as soon as I walked through the door and feeling instantly at ease and ready to eat good.

I haven’t been as present with myself lately and I just wanted to eat something that felt like home. Trying to reconfigure productivity as a metric for how I’m feeling. Rest is also just as important. It’s okay if all you did today was get up and make chicken cutlets. by @makamakakitchen_

hey, been a while. This is the first thing I’ve made in a long time that felt like home. Still getting to know our new kitchen but it’s working out well so far. by @makamakakitchen_

hi, it’s been a busy start to the year and I haven’t been cooking all that much outside of, you know, just sustenance eating. I’ve shifted some of my creative energy into other practices as a result, which is good I think but I miss being in the kitchen.

I’ve been thinking about planning a monthly or bi-monthly dinner where I can really let myself go crazy. Plan courses, invite folks over, the whole thing. If you’d be interested in that, let me know and I’ll keep you posted.

Anyway, cut some potatoes into cubes and par boil them until they’re just soft enough to stick your fork in - make sure to add a splash of vinegar so the potatoes keep their shape and don’t fall apart on you when you shallow fry them in oil. Add some chopped green onions or whatever you have on hand, a good amount of garlic off heat or on low, and a handful of chopped fresh herbs. I used dill and parsley, my favorites.

Love u, keep eating. by @makamakakitchen_
