Variety is the Spice of Life 🌶
Founding Culinary Director and Head of Ecosystem @meetmilna

POSTS STORIES REELS

@milanmeetups was all about intimate conversations that stretched late into the evening and creative food.

Cooked up some masala ghee fondant potatoes, Tandoori Chicken Sopes, and a pistachio tiramisu made with @rubarooed Chai that quickly disappeared.

My friends and roommates brought the warmth and energy that made it all come together.

It was one of those nights that felt memorable—good company and flavors, the kind of moments you want to run back again soon.

How to Make Fusion Meatballs That'll Make both Italians enraged and Pakistanis side eye

Take 3lbs of chuck beef (fat is flavor, don’t argue), add a panade made from Greek yogurt and Panko bread crumbs and season it with Pakistani spices like garam masala, cumin, and coriander. Variety is the spice of life, and you can get creative. I added some parsley, cilantro, and kashmiri red chili for that fire.

Toss in eggs for structure, beef gelatin for moisture (science: gelatin locks in those juices like a desi aunty trapping you and asking you why you still single), and some Parmesan and beef prosciutto for that umami kick (glutamate is your savory best friend).

Form into meatballs. Roast at 425°F for 20 mins to caramelize the outside, then braise in a rich tomato sauce at 325°F for another 20 mins until tender. Braising breaks down the collagen, making your meatballs even more tender!

The result? A dish fusion, Italians will curse, and your desi relatives will wonder if you've lost your way—but they'll keep eating.

The steaks are high in this video.

Some great tips on cooking steaks.

My favorite cuts would be the ribeye for the value. Ribeye has great marbleing and flavor. The high marbling content, interspersed fat within the meat, contributes to its rich taste and succulence.

Also, hangar is a solid option. Its referred to as the "butcher's cut" due to its historical association with butchers reserving it for themselves. The hanger steak possesses a pronounced beefy taste.

Be sure to buy quality meats. Organic or grass fed is preferred. Be sure to salt your meats ahead of time. This rule applies to any meats (chicken, beef ect.)

Let it get to room temperature. This is important.

Turn up the medium high and cook for around 3.5 mins to 4 mins on each side. Your cooking so take into consideration what's in front of you as a general rule.

Finish with garlic, more butter, and fresh herbs until the butter becomes caramelized. For a finish.

Muhājir was such a good experience. A story told through food, blending culture, migration, and flavors from across the spice routes. Every dish felt intentional, creative, and rooted in history. Definitely a unique addition to Chicago’s food scene.

I met Imran at a Muslim artist meetup in Detroit a while back. And I think about what it means that a space like that existed then. That we can find each other, build with each other, be seen by each other. Our parents didn't have that. They were too busy making sure everyone else survived.

Imran grew up in Metro Detroit speaking Urdu and English, surrounded by enough diversity that curiosity became his default setting. He's the child of the first ones to come, and if you know, you know what that means. It means your family made a bet on a country that didn't always bet on them. It means resources got split across oceans, between the life being built here and the family still back home. It means the us kids absorbed some of that too. The sacrifice wasn't just theirs to carry. We felt it.

Is there anything from your family's culture that you've held onto? "Definitely our tradition of gathering around food. Whether it was family dinners, chai with guests, or big celebrations, there was always an understanding that people come first. That spirit of generosity, hospitality, and connection is something I'll never let go of."

Imran kept the food. The chai. The understanding that people come first. What he let go was the idea that connection has limits. "Some of the most meaningful friendships come from engaging with people from all backgrounds," he said. So that's how he moves.

Most people know him as social, always on the go. The people closest to him get something else; the one that cooks, paints, makes music. Turns ideas into something you can hold on a plate or canvas.

He taught himself how to bring people together. Figured it out through trial and error. Watched it work. Kept going.

Second-generation Pakistani American. Metro Detroit made. Now building community in Chicago.

A beautiful little moment of community—everyone gathered over nashta, hot chai, and fresh samosas, taking turns around the carrom board while laughter floated through the room. Art was made and music as well

The whole space felt grounded and mindful, like time slowed down just enough for people to truly connect. Different energies and shared vibes.

Saturday is still living rent-free in our heads.

Seeing artists, DJs, chefs, friends, and new faces all sharing the room felt really special. You brought the warmth on a very cold day, and we’re grateful for that.

First look at some photos and videos, the good ones courtesy of @kofi221_
