The Collector’s Table | Asia Series | Singapur | 23 April @ottoristorantesg restaurant tasting experience | Gaja ‘A Barbaresco Legend’ @giovannigaja The GAJA philosophy is straightforward: each vineyard is a precious independent organism, a unique universe where different life forms coexist. During this dinner we had the privilege to share with some of the Melchior Assembly Members from the Singapore hub, a travel from present to past. All wines presented a high level intensity and awoke emotions in all guests. To note a special mention to the Barolo Sperss 2001 and the 2022s barbarescos, already drinking very well at such a young age. Looking forwards, the souls behind this domain believe in moving higher in altitude, especially for early ripening varieties such as Chardonnay and Sauvignon Blanc. 40 years of experience with these varieties on the hills of Barolo and Barbaresco will continue now in a higher altitude area of the Langhe, where they have planted new vineyards and created a separate winery devoted to producing white wines. Today they remain committed to experimenting and innovating ancient practices such as massal selection, with a restless drive for the absolute best in quality. by @melchior_18

Camille Thiriet @camille_thiriet — Building a Legacy Since 2016 Since 2016, Camille Thiriet has been shaping a journey defined by vision, ambition, and an eye for the extraordinary. What began as a vision has evolved into a legacy built on passion, bold choices, and continuous reinvention. Always evolving: Staying curious, embracing change, and creating new possibilities are part of the journey. More than a name: A legacy is ultimately defined by the ideas, values, and impact left behind. Nearly a decade of building, evolving, and creating something that lasts. The story continues. by @melchior_18

Melchior and friends were lucky enough to taste some great wines in September. We’ll spare you notes on every bottle, since, frankly, few people would care. Let’s focus instead on the emotions and the moments shared. Two great moments stand out, both thanks to a combination of factors: the setting, the company, a certain je ne sais quoi in the air that day, an anecdote from the sommelière, and so on. A few treasures remain on the wine list of the new-generation Tour d’Argent, despite prices that are now sometimes very steep. One of the great bottles Melchior18 has drunk in his life was a Charles Joguet 1990, tasted at the estate about ten years ago. What a lovely surprise, then, to find a 1997, presumably still made by Mr Joguet himself. Freshness, precision, elegance, tertiary aromas just beginning to show - magnificent. Chinon really is a great terroir, one that deserves attention and time. With all due respect to Cabernet Franc, when it’s handled with such finesse, it almost seems to be “pinoting”. Quite simply sublime. Speaking of finesse, what can one say about this Grange des Pères 2005? Two bottles tasted two weeks apart, with the same sensation each time: it’s a jolt, it snaps across the palate, it makes your tongue tingle, and you can’t help but smile, look at each other and say “PUTA*N” (or words to that effect). Then your mouth waters and you go back for more. Fabulously fluid. by @melchior_18

A little teaser from tonight’s episode with Nicolas Groffier @domaine.robert.groffier Tonight, we enter his world and how he crafts emotional wines—wines that provoke a feeling in every glass—while adapting his craft, his vines, and his vision year after year. by @melchior_18
Domaine Robert Groffier @domaine.robert.groffier is a story that goes far beyond the craft of the vineyard. Rooted in Burgundy and in a family tradition passed down through generations, @nicolasgroffier invites us into his world where wine is inseparable from the passions and disciplines that shape work behind it. For him, cycling, sport and music are not simply pursuits outside the vines; they become part of a way of thinking — a way of preparing the mind and body for the demanding rhythm of life in the vineyard. There is something deeply poetic in this connection: the endurance required to ride, the concentration needed to listen to music, the discipline of sport, and the patience demanded by the vine all speak the same language. by @melchior_18
