How To Cut A Cake 🍰

People are often surprised when I suggest that you can get 14+ servings from a 6” cake. And, to be fair, if you cut it into classic cake wedges, it might be tough. This heart shaped cake was an 8” on the bottom and a 6” on top. Each tier was 3 layers - so for me that means 4.5” tall.

Unless your ‘event’ is a Tea & Cake type gathering, you likely have other food offerings in addition to the cake so most people will enjoy what we call a ‘polite’ serving.

To complicate things, if you get a taller cake and add an extra layer for a 6” high cake, this will give you even more servings since your slices will be a bit more narrow. By slicing the cake into squares, like I’ve done in the video, you have a lot of flexibility on size for those who ‘only want a sliver’.

Now, back to the exact cake in question here. This 6”, 3 layer, heart shaped cake gave me 18 slices. The 8”, 3 layer heart shaped cake beneath it gave me 30.

And that is how you’ll get 48 servings from an 8” & 6” tiered cake.

*NOTE: I cut the cake when it was cold - which is why you could see buttercream ‘chunks’ fall off the cake. In addition this particular cake is incredibly stale as it’s been in my fridge for 9 months. If you serve it up fresh and at room temperature as it is best enjoyed, you’ll need to be a bit more delicate in the cutting process.

The real answer is ⤵️
.
First, and most importantly, this is your event. You know your guests better than anyone. So don’t let anyone tell you what you ‘must do’. Also, there is no wrong, or supremely right answer to this.
.
The easiest & quickest answer; Industry standards would suggest that you would only require half - 2/3 the number of servings to guests. As an example, for easy math, if you have 100 guests, you will likely only require 50-70 servings of cake IF you have dessert included with your dinner. If the cake IS the dessert (which I love by the way!) then you should have one piece for each guest available.
.
Of course, it can get complicated. The truest answer depends on so many factors, such as; do you also have a late night table coming out? Is it sweet or savory? Will there be other dessert type options (cookies, donut wall, candy buffet etc)? Are many of your guests ‘on a diet’ / dairy free / gluten free? Will many people be leaving earlier, before the cake / late night table is available? Are you announcing the cake cutting or will it be put out without announcement? Are you providing boxes for people to take cake home? Is your favour an edible sweet? You get the idea.
.
When you’re ready, this is why we are here. The cake professional you choose should help walk you through these questions to determine a cake size that works for your individual wedding.

Real or Faux Flowers, ⬇️ what you must know.
.
.
REAL FLOWERS
Pros
1. They bring a natural, organic beauty.
2. Generally provided by your florist, they match the rest of your wedding decor perfectly.
3. Depending on the final design, they are often the more economical choice
.
Cons
1. Flowers are often sprayed with pesticides that can be harmful if ingested. They must be properly washed or protected on the cake.
2. Beware toxic / poisonous flowers. Make sure you discuss with your florist that toxic flowers are not provided for the cake.
3. Some flowers have a strong odour that can affect the flavour of some slices of cake if not properly protected.
.
SUGAR FLOWERS
Pros
1. They last. There is no wilting or discoloration as the event wears on. You can be assured they will be just as beautiful at the end of the day as they were at the start.
2. They are versatile- you can achieve floral variety and colours that may otherwise not be seasonally available. You can also design then far more deliberately to match your dream design.
3. No allergy, toxicity or poisonous concerns as they are usually made from gumpaste, fondant, wafer paper, rice paper or, rarely, actual sugar.
Cons
1. Usually require more of an investment than real flowers
2. While they are made of edible products - though often contain wire for structure - and technically edible, they are not generally palatable and not usually intended for consumption.
3. Colours may not perfectly match your other floral decor (honestly, most won’t notice that, but for some this is important).
.
ULTIMATE DECIDING FACTORS
1. Budget is often a part of the decision making process here. Real flowers are often much less expensive than sugar
2. Climate & season may also affect your decision - in very hot or dry weather some fresh flowers are more prone to wilting.
3. Your theme and design may require more flexibility than real flowers will offer.
.
ULTIMATELY this decision is yours. And there is no wrong answer, simply the answer that is best for you. Any good cake designer can help you with this.
