BLUEBERRY OREOS | 🫐⚪️🟤
-
Double Creme Oreos and Rooibos tea are infused into coconut water sous vide before being processed through rotary evaporation to create a concentrated tincture. Fresh blueberries are transformed into a homemade cordial, while grape skin vodka and mexican rum are infused with cream tea in sous vide for three hours & finished after with a touch of dry vermouth.
This carbonated drink is bringing together creamy biscuit notes, bright, fruity & berry acidity with a crisp, refreshing finish. 🫧
-
For the garnish, we recompose the fresh blueberries used in our house-made cordial into an edible gel, which we serve on a fresh Oreo cookie. 🍪🟣
-
You’ll find this drink on our new menu, dropping this weekend. 🃏

San Foca 🍓🍅🌿
•
A tomato & basil tincture crafted using our rotary evaporator, brings a savory freshness and aromatic herbal character, balanced by a strawberry & vanilla oleo saccharum that adds natural sweetness.
Finished with our own selected rum blend & some bubbles.
Creating a layered drink that moves between fresh, fruity, herbal, and gently savory. 🫧
•
For the garnish, we dried fresh basil and combined it with black pepper and a touch of sea salt.
•
Every drink we create has a story.
This one was inspired by a moment sitting with my grandpa by the sea in San Foca, a small town in southern Italy, sharing a simple tomato salad with fresh basil & strawberries on the side. 🌊

Familie. Gastfreundschaft. Echte Freundschaft. Authentizität. Musik.

Cantaloupe 🍈
•
For this refreshing summer drink, we use a method called „oleo saccharum“. It‘s made from cantaloupe melon, fresh vanilla and sugar.
After 24 hours rest, it’s combined with freshly brewed mint tea, a touch of citric solution & finished with Gin Sul Laranjal and a splash of soda.
•
As a zero-waste garnish, we repurpose the cantaloupe melon and vanilla from our oleo saccharum into an edible drop. 🟠
