Here’s a simple, viral-inspired 2-ingredient no-bake “Japanese-style” cheesecake recipe using Greek yogurt and Biscoff cookies. This hack has been blowing up because it’s ridiculously easy, high-protein, healthier than traditional cheesecake (no cream cheese, eggs, or baking required), and sets into a creamy, spoonable texture after chilling. The cookies soften and infuse the yogurt with their caramelized, spiced flavor while absorbing moisture to help it firm up.

This method mimics the fluffy, light vibe of Japanese rare cheesecake but keeps it super minimal. No actual cheese involved, but the tang from Greek yogurt + the rich Biscoff taste tricks your brain into thinking it’s classic cheesecake—especially in the coffee version!

Tips :
• Use thick Greek yogurt but vanilla flavour.
• Chill longer if it’s not firm enough—up to 12-24 hours.
• Vanilla Greek yogurt adds natural sweetness and flavor without extra sweetener—great base!
• It’s healthier: high protein from yogurt, lower sugar/fat than classic cheesecake.

These turn out creamy, lightly sweet, and addictive—the Biscoff brings caramel-spice notes that pair amazingly with coffee (rich and indulgent) or matcha (earthy and balanced). The coffee one really does evoke classic cheesecake flavor without the heaviness.
Enjoy your new healthy dessert obsession—let me know which flavor wins for you! 😊
