Better for you NUTELLA 🌰
Finally sharing my favorite refined sugar free Nutella recipe with you.
Please also read the NOTES before making it, so it turns out amazing🤍

Ingredients:
300g hazelnuts @yupik
180g date sugar @thedatelady
35g cocoa powder @navitasorganics
60g avocado oil @mariannesharvest
1/2 tsp salt @jacobsensaltco

Roast your hazelnuts on 350F for about 15 minutes or until golden. Be careful not to burn them.
Transfer into food processor and blend. It can take up to 5 minutes until you reach the right consistency. Add avocado oil and blend again before adding cocoa powder and date sugar step by step. In the end add salt and after blending again, fill in your jars and I like to keep them in the fridge for best consistency.

NOTES:
- If you want to substitute the date sugar with another sweetener, it has to be some kind of powdered sweetener! Granulated sugar won’t dissolve in fat so you will end up with crispy pieces of sugar in your Nutella. Other sweeteners that will work: coconut sugar (blend so it’s really fine before adding, monk fruit sweetener, powdered sugar)
- DO NOT substitute with honey, maple syrup or other syrups, since they’re water based. If you do that, your Nutella will become hard.
- If you substitute with powdered sugar only use 100g because the sweetness is stronger. That also
- It also depends on your blender, it may be that you need to pause in between all the steps to let it cool down
- The consistency depends on whether you keep it in the fridge or not. by @naemyklassen_

Happy birthday to my soulmate ✨
I could NEVER EVER wish for someone better than YOU 🫶🏼
You make me feel the most special woman on earth and life with you feels so light. No matter what we go through I know I can always count on you. 🤍 by @naemyklassen_

There’s something about nature that is so fascinating — you step outside and everything just... slows down. The noise in your head gets quieter. Your shoulders drop a little. You remember how to breathe.

We are so thankful for every beautiful moment God gives us.

These past 2 weeks have been heavy. And today felt like exactly the reset we needed — no schedules, no IV lines or blood tests, just the smell of nature and the sound of water ⛰️

Cycle 2 is almost over and on one hand, it feels like it will never end but on the other we already finished 5 rounds of chemotherapy and it felt like, that was so fast. So we try to focus on the beautiful moments and hope that the hard ones will pass very quickly and soon we will say „ Let‘s do our last round“

Iron-Boost cookies 🍪

1 cup pumpkin seeds
1 cup sunflower seeds
1/4 cup hemp seeds
1 ripe mashed banana
1 pinch of salt

Mix everything together use a cookie cutter to form the cookies. I did 30g per cookie. Bake on 350F for 15-20 minutes.
Let cool completely and now melt some chocolate and drizzle over 🍪

The most important thing about iron is to pair it with vitamin C for best absorption. 🍋 So you can pair those cookies with a glass of honey lemonade, orange juice or some fresh raspberries.
❌ you should avoid having dairy products, one hour prior and two hours after having those cookies for best iron absorption❌

She’s a living miracle ✨

When the doctors predicted her lowest moment, God filled her with new strength instead. The last word is always His.

These past days haven’t been easy — and before things could get harder, just as the doctors warned, we chose to start praising God for the strength He was giving her. For weeks, we woke up multiple times every single night. But last night was different. Before bed, we prayed that God would give her a peace deep enough to sleep through the night. And when we woke up this morning, we could hardly believe it — her first full night of sleep in weeks. She woke up so calm and happy, playing, dancing, and smiling, filling our hearts with overwhelming gratitude.

What I’m most grateful for is watching God work so miraculously through this season. Every day we look at her and see the tumor melting away.

We’re in awe that God is using her story to touch so many hearts. I can’t wait to see what else He has planned for us. 🙏🏼✨

#rhabdomyosarcoma by @naemyklassen_

The past month in some pictures.
Definitely the hardest month of our lives.
You never expect to hear „it’s an aggressive cancer“ when it comes to you or your loved ones and although this hit us hard, we know that we have someone who’s bigger than any diagnosis.
OUR FATHER IN HEAVEN ☁️
Who strengthens us and gives comfort when we cry out to him. 🙏🏼 We see his hand in every little thing.

Since the cancer diagnosis the world feels so much heavier.
I want to support my little baby girl as much as possible but at some point I feel like my battery is empty. And if you’re going through a hard time right now, I will give you one advice:
Don’t forget about yourself and try to do something that will charge your battery. 🔋
You can’t run on an empty tank and still give 100%.
Even if it’s just grabbing a coffee, going to the grocery store by yourself or taking a 10 minute walk, this is what gives me new strength to fight for my princess.
And today it was a little farmers market stroll, where my brain just switched off and I enjoyed the moment 🌺

The first day when we got the diagnosis, was the hardest day of my life.
I never cried like this before.
I screamed…
I don’t even know at who.
But there was just so much anger and confusion.
I couldn’t explain that.

I heard so many times about people getting cancer, but I would never think that this would hit us.

The first day, I thought I will never overcome this.
It was a pain that I can’t even describe.

And then we shared the news with our family, church community, and my community here on Instagram.
The amount of messages that we received, where you told us that you pray for us was unreal.

Since then 2 weeks have passed.

And I can’t even describe how it’s possible, but God gave me a supernatural peace in my heart.
A peace that surpasses all understanding.
I don’t understand how this is possible, but this is what I’m holding onto right now.

I know we’re only at the beginning and it’s going to be a journey, but I also know that our heavenly father will never let go of my hand. 😭

Our first big surgery is behind us. Thank God everything went well and Avaia is feeling so much better. We really see God‘s hands in everything. This time after the anesthesia, she was so calm and we were told after that, we had the best anesthesiologist, who worked there for 30 years and is actually retired, but he comes in sometimes for special cases. Our little angel was really lucky, to be in good hands and we praise God, that he send us the best doctors and nurses and that his angels are always with us, with every step we take.
Now Avaia has a G-Tube and they also did a lumbar puncture and a bone marrow biopsy. She‘ll have a few days to get stronger again and next week, there’s another surgery, where she will get her port and soon we will start with the chemotherapy. That word is still something, I can’t get used to and I don’t even want to get used to it.
When I gave birth to Avaia, my favorite bible verse was Philippians 4:13:

„I can do all this through God, who gives me strength.“

And this verse still carries me. On the days where I think I can’t anymore, I know I can rely on my Heavenly Father ❤️🙏🏼

Please tell me it’s not true😭
Explaining to my 3 years old what his little sister has to go through is so heartbreaking. 💔
