💚 Gifting boxes of gluten free snacks to kids living with #celiac disease

✨If you grew up loving Cosmic Brownies… you NEED to try this gluten-free version! ✨ Super fudgy chocolate brownies topped with a silky ganache and those nostalgic rainbow chips. Honestly… they might be even better than the ones we grew up with. 👏🏻 Huge shoutout to @sweetsandthankyou for the amazing recipe! Brownies: 1 1/3 cups semi-sweet chocolate chips 5 tablespoons butter 3/4 cup granulated sugar 2 large eggs 1 teaspoon vanilla 1/3 cup gluten free 1:1 flour 3 tablespoons unsweetened cocoa powder 1/2 tsp kosher salt Ganache: 1 cup semi-sweet chocolate chips 1/2 cup heavy whipping cream GF rainbow chocolate coated chips (found mine on Amazon!) How to Make: Preheat oven to 350°F and line a metal 8x8 pan with parchment paper. In a microwave safe bowl, combine 1 1/3 cups chocolate chips with the butter and melt in the microwave in 15-20 second intervals until smooth. Let it cool slightly while you work on the eggs and sugar. In a large bowl, combine sugar and eggs. Whip with whisk or handheld electric mixer for 2-3 minutes until doubled in volume, lighter in color and sugar is almost completely dissolved (she stresses not to rush this step!) Add chocolate mixture to egg mixture along with vanilla and mix until smooth and well blended. Add in cocoa powder, gluten-free flour, and salt and stir until just combined. Pour batter into pan and bake 18-20 minutes until set (mine took more like 23 minutes but depends on the oven!) Let brownies cool completely before frosting. Heat heavy cream until nearly boiling (on stove or in microwave), then pour over chocolate chips. Let sit about 5 minutes and then stir until smooth. Spread ganache over cooled brownies and sprinkle with rainbow chips. I didn’t know it yet, but this box of cookies would be the start of Nick’s Snack Pack, and change our lives forever. 🤯 Our son, Nick, was diagnosed with Celiac Disease at age 3 - and by the time we received this box in the mail, we had been living gluten-free for 3 years. 📦 This box was full of all different flavors of gluten-free cookies. I let Nick open up the box, and when I told him he could try ANYTHING in this box, his face completely lit up. He was SO excited! 🥳 We’re always telling Nick what he can’t have, and it’s not often he has the freedom to try ANYTHING he wants. 💔 And then it dawned on me….. 💡 What if we could bring this type of joy to ALL kids living with Celiac Disease? 💡 What if we could gift them with a box that is full of safe snacks for them to try? 💡 What if, for once, we could make them feel INCLUDED because they have Celiac Disease, instead of feeling left out? I was so excited about this idea, I was jotting down notes and brainstorming at all hours of the day and night. I couldn’t wait for Nick’s Snack Pack to come together! 📝 We officially became a non-profit and gifted our first Snack Packs locally in September of 2023. Within just a few months, we started shipping them countrywide. 📬 As of today we’ve gifted almost 700 Snack Packs to kids all across the country who are living with Celiac Disease. We just tried @promiseglutenfree for the first time, and we LOVE it! 🍞 Their soft white bread is perfect for sandwiches. The texture is so good, and the slices are HUGE! 🫐 The blueberry muffins are those nostalgic, bakery-style muffins that every kid deserves to enjoy. 🎃🍫 Gluten-Free Chocolate Chip Pumpkin Bread 🍫🎃 I brought this recipe home from kindergarten, and my family has been making it ever since! ❤️ When Nick was diagnosed with Celiac Disease, I swapped out the regular flour for gluten-free flour - and it worked perfectly! It’s now one of our favorite fall recipes. 🍂 Here’s the recipe so you can make it, too: 1 cup gluten-free flour 1 cup sugar 1/4 tsp cinnamon 1/4 tsp salt 1 tsp baking powder 1 tsp baking soda 1/2 cup oil 2 eggs 1/2 cup pumpkin 1/2 cup chocolate chips Mix everything together, then pour into a greased and floured loaf pan. Bake at 350F for 30–40 minutes, or until a toothpick comes out clean. It might seem silly that the gluten-free community is THIS excited about gluten-free Goldfish… But here’s why. Goldfish represent childhood. They’re the snack at school, daycare, camp, birthday parties, playdates and after-school activities. They’re something kids grow up eating without ever thinking twice about it. But for a child with Celiac Disease, Goldfish have also been a reminder that they’re different. A snack their friends are eating. A snack they can’t have. A snack they may have watched everyone else enjoy while reaching for the “safe” alternative their parents packed. So when we hear that gluten-free Goldfish are finally being developed, we see so much more than a cracker. We see a child getting to grab the same snack as their friends. We see a parent not having to say, “I’m sorry, you can’t have those.” We see one more little moment where a child with Celiac gets to feel included instead of different. 🫶🏻 To most people, this is just an announcement about a cracker. To us, it’s a BIG deal! Because sometimes the smallest things can make the biggest difference in a child’s world. ❤️🐟 It’s the one snack that Nick has missed the most since he was diagnosed with Celiac Disease at age 3.
