At the press conference, we gave the first glimpse of Odles Slow Dolomites – the new identity for the valleys of Villnöss and Lüsen.

Thank you to everyone who joined us. We are truly excited to embark on this new chapter. by @odles.slowdolomites

There is something beautiful about this moment of transition – when one season gently gives way to another and nature reminds us that change is part of its rhythm. by @odles.slowdolomites

The final weeks of the hiking season can be among the most beautiful – but autumn in the mountains asks for a little more preparation.

Higher trails may already be covered in snow, shaded paths can become wet and slippery, and some alpine huts have already closed for the season. Conditions can change quickly as the days grow shorter.

Before setting out, check the weather, trail conditions and opening times of the huts along your route. Choose a hike that matches your experience and fitness, allow enough time for the shorter daylight hours and make sure you have suitable clothing and sturdy footwear.

With a little care and good planning, autumn rewards you with golden forests, quiet trails, clear mountain air and those unforgettable moments when it feels like you have the mountains almost to yourself.

Some traditions are best understood around a table.

"Knödel" are one of those unmistakable tastes of South Tyrol – simple, hearty and deeply rooted in the region’s farming heritage. Made from humble ingredients and shaped by generations of knowledge, they have long been part of everyday mountain cuisine.

From classic savoury combinations to seasonal variations, every family and every kitchen may have its own way of preparing them. by @odles.slowdolomites

There is a certain warmth to an autumn afternoon in the mountains.

When the sun sits lower in the sky, the valleys seem to glow from within. Golden larches, soft light and long shadows turn even familiar paths into something new.

These are the afternoons made for lingering – for a quiet walk, a view across the mountains or simply a few moments spent watching the light move through the landscape.

Hiking season is slowly drawing to a close – but there are still beautiful days to be found on the trails. It is a wonderful time to experience the mountains in a quieter mood, surrounded by autumn colours and crisp air.

If you are planning one of the final hikes of the season, remember to check trail conditions and opening times of the huts before setting off. In the higher mountains, winter can already make its first appearance.

Autumn does not arrive all at once. It settles gently into the valleys.

The trails grow quieter, the air becomes clearer and the landscape slowly changes its colours. Yellow leaves shimmer in the forests while the larches turn to warm shades of gold. by @odles.slowdolomites

What does it mean to live from the land?

On the Farmer’s Trail in Villnöss valley, you can discover the answer through the landscape itself. Traditional farms, grazing Villnösser Brillenschaf sheep and Grey Geisler cattle are all part of a cultural landscape shaped by generations of mountain farmers.

Every Thursday from 9.00 am to 5.00 pm, sheep farmer Günther Pernthaler leads a guided circular walk from St. Peter, sharing insights into traditional farming, sustainable agriculture and permaculture along the way.

There are also moments to taste what the farms produce – first at the Gsoihof and later at Maier’s Paradies – making this a journey that connects landscape, knowledge and flavour.

On the Lüsner Alm, autumn brings quieter trails, crisp mountain air and landscapes glowing in shades of gold. Some alpine huts remain open until the end of October or even into early November, offering a last chance to pause beside the trail and enjoy the warmth of mountain hospitality.

A sheep with a story – and a very distinctive look.

The Villnösser Brillenschaf sheep is one of South Tyrol’s oldest sheep breeds. Its characteristic dark markings around the eyes make it look as though it is wearing a pair of glasses. But there is much more to this special breed than its appearance.

Once close to extinction, the Brillenschaf has been carefully preserved by local farmers who continue to dedicate their time and knowledge to keeping this part of South Tyrol’s agricultural heritage alive.

From 9th to 18th October, the Lamb Weeks celebrate this rare breed through regional cuisine. Participating restaurants in Villnöss and Lüsen will serve specialities made with Villnösser Brillenschaf lamb – bringing tradition, local farming and the flavours of the mountains together on the plate.

Autumn is a time for gathering – and for giving thanks. After a year of sowing, tending and caring for the land, the harvest brings the fruits of all that work to the table. In the valleys of the Slow Dolomites, Erntedank is a moment to pause and appreciate what nature and the people who work with it provide.

It is a celebration of gratitude, but also of traditions that have been passed down through generations. Of local produce, honest craftsmanship and the close connection between people, land and food. by @odles.slowdolomites
