☀️ LUNCHBOX SERIES ☀️ 10 ways with leftover chicken For the last few months, I’ve been getting into the habit of cooking up some chicken to shred for lunches every single week. However, I very quickly reached a point where I would open my fridge and have the biggest brain blank on what to use this cooked chicken for - I know for myself, eating chicken sandwiches every single day wasn’t very appealing 🫠 So I gathered my family, got our thinking caps on and came up with lots of delicious and creative ideas that we could turn this leftover cooked chicken into 💡💡💡 Now, rather than staring at a container of cooked chicken blankly every week, I have a handy post packed with easy, delicious, kid approved ideas to solve that dilemma 🙌🏼 Which idea are you most excited to try? 🩷🧡💛 by @our_sunny_kitchen
☀️ LUNCHBOXES ☀️ Last term I had the honour of being a parent helper at an excursion for my daughters class trip to the zoo - double bonus was Miss 3 got to come too 😍 It was such a fun and exciting day, her class did our school proud and we were all exhausted by the end (hello 20,000 steps). Of course, I needed to pack us all something nutritious and a little fancy ✨ So sushi, fruit salad, snacks for us and some blueberry muffins for all of the amazing teachers & parent helpers. My mummy heart was so proud and fulfilled at the end of the day - it’s not lost on me how lucky I am that I get to do this. 🩵🩷💜💛 @lunchbox_mini always 🩷🩷🩷 by @our_sunny_kitchen
☀️ SPORTS FOOD DIARIES ☀️ A few weeks ago my daughter was invited to play in a full day netball carnival - her second ever carnival and her excitement was through the roof! My mind went straight to thinking of what food I could pack for the day 👩🏻‍🍳 I wanted to pack food that she could share with her teammates, was easy to eat, wasn’t too heavy but also delicious and would give her plenty of energy for a big day 🏃‍♀️ Seeing her with her teammates, sharing food, chatting about the day, all while bedazzling and glittering each others hair is what team sport should be all about ✨ So here is everything I packed for a full day netball carnival - 8am to 3pm 🩷 Dip, crackers, veg sticks, cheese & twiggy sticks 🧡 Ham & salad rolls 💛 Fruit salad 🩷 Cherry ripe slice 🧡 Lollies 💛 Popcorn, yoghurt & choc milk #netballfood #sportfood #netballnutrition #netfit #sportscarnival by @our_sunny_kitchen
☀️ SPORT NIGHT DINNER DIARIES ☀️ This Chicken katsu curry surprisingly worked really well for a re-heatable sport night dinner. It was exactly what everyones tired, hungry bodies needed after a busy afternoon and evening. With 2 busy sport nights a week this term, I’m trying out a different way of serving dinner - I’m meal prepping individual serves of dinner that can be reheated whenever we get home - no waiting for dinner to cook and no takeaway 🙌🏼 If you’d like this recipe, let me know and I’ll send it through 🩷🧡💛 by @our_sunny_kitchen
☀️ LUNCHBOX DIARIES ☀️ We had a really busy weekend so I prepped a few very simple items for lunchboxes this week. I also cooked up some extra chicken schnitzels for our Monday dinner and popped them in a delicious rye ciabatta with some lettuce and mayo. Everything else we have on the menu for lunchboxes this week ⬇️ 🍃 Asian mince & salad wraps 🎃 Pumpkin choc chip muffins 🍗 Leftover chicken schnitzel 🍛 Katsu chicken curry ❄️ Freezer stash Along with only the freshest produce in Perth from @glavocichproduce 🚨 Use code SUNNYKITCHEN at checkout for 15% off your first order 🍓 by @our_sunny_kitchen
☀️ SPORT NIGHT DINNER DIARIES ☀️ Bolognese is one of my favourite freezer friendly / meal prep dinners. It is such a versatile sauce - it freezers and reheats really well and you can hide so many different veg in there. Here we have a bolognese style bake - cooked pasta topped with a veg loaded bolgnese sauce, a simple bechamel sauce and topped with some grated cheese and fresh parsley. With 2 busy sport nights a week this term, I’m trying out a different way of serving dinner - I’m meal prepping individual serves of dinner that can be reheated whenever we get home - no waiting for dinner to cook and no takeaway 🙌🏼 I would love to know, what do you do for dinner on busy sport nights? by @our_sunny_kitchen
☀️ SPINACH COB LOAF ☀️ I made these individual cob loaves for the footy grand final a few weeks ago and they were a huge hit! Not too rich, super easy to make and just perfect creamy goodness to share with your family and friends. INGREDIENTS 4 crusty bread rolls 250g fresh baby spinach roughly chopped 125g sour cream 250g cream cheese block 1 sachet of french onion soup mix (dry mix) 100g grated mozzarella cheese 1/2 cup milk METHOD Preheat oven to 170 degree celsius fan forced. Cut top off rolls and place onto a baking tray. Scoop out inside of cob loaf and tear into pieces and place on baking tray next to cob loaf. Bake in oven for 10 minutes or until golden and slightly crispy inside and out. Combine all ingredients in a large saucepan and melt over low heat. Pour hot dip straight into cob loaf and serve alongside baked pieces of bread, vegetables and crackers or whatever you fancy. Try and stop after 1 bite, i dare you! 😝 by @our_sunny_kitchen
☀️MINI M&M SLICE ☀️ A delicious little sweet treat to whip up to add a splash of the rainbow to your kiddos day 🌈 🍱 Lunchbox stash ❄️ Freezer friendly 👩🏻‍🍳 Get the kids involved INGREDIENTS 250g of Scotch fingers 200g condensed milk (half a can) 100g melted butter 335g mini M&M’s (family bag) 180g block chocolate METHOD Line a slice tin with baking paper and allow enough overhang so you can remove once firm. Crush biscuits into a fine crumb - I use my Thermomix, but a food processor or zip lock bag and rolling pin work just as well. To a mixing bowl add crushed biscuits, melted butter, condensed milk and half the bag of M&M’s and mix until combined. Spoon mixture into lined baking tin and press down firmly to compact. Melt chocolate and pour on top of slice, sprinkle with remaining M&M’s. Place in fridge for a few hours until firmly set. Remove and cut into pieces and store in air tight container in fridge. Enjoy✨🩷🧡💛 Original recipe and inspo from the lovely @taylacespedes by @our_sunny_kitchen

☀️ BISCOFF ICE CREAM SANDWICHES ☀️ We decided to try the new Biscoff ice cream sandwiches the other day, and they were truly the most delicious sweet treat - but I DID NOT like that 4 of them cost $11.50 😱 As we were talking around the dinner table about how expensive they were, my eldest declared that she would make some herself! So the next day we trotted off to the shops, collected the ingredients and 15 minutes later we have a tray of homemade Biscoff icecream sandwiches ready for the freezer. This whole tray made 14 all for only $13.50! INGREDIENTS 1 x 2lt tub of vanilla ice cream or make your own 2 x 250g packets Biscoff biscuits METHOD Remove tub of vanilla ice cream from freezer and allow to soften for 20 minutes or so. Line a slice tin with baking paper and allow enough overhang so you can remove once frozen. Place a layer of biscuits on base of tray. Roughly crush up 1/2 - 1 full packet of biscoff biscuits. Mix through softened vanilla icecream. Pour on top of biscuits in slice tray and then top with remaining biscuits in the same direction as the ones on the bottom. Place into freezer overnight to firm up. Cut into ‘sandwiches’ and place into air tight container. Enjoy✨ by @our_sunny_kitchen
☀️ TERM 4 LUNCHBOX FREEZER STASH ☀️ Feeling super organised heading into Term 4🤸🏻‍♀️ and thank goodness because it’s going to be a busy one to end the year! I’ve kept things really simple for the final term - in the warmer weather we tend to eat alot more sandwiches, wraps and fresh items. Here’s everything I have stocked my freezer with for Term 4 ⬇️⬇️⬇️ 🩷 Pesto, spinach & 3 cheese pinwheels 🧡 Supercharged sausage rolls 💛 Super weetbix slice 🩷 Mini monster muffins by @our_sunny_kitchen
