how to make garlic chips :)

hello all! this is one of those techniques you might never choose to do but makes one of the best garnishes for practically any dish. the reason garlic so easily burns and so unevenly too is because of sugar. garlic has a high sugar content and that causes intense caramelization that leads to dark abs acrid flavored garlic chips if you fry them straight up. cream/milk is the real star behind making these fragrant and sweet garlic chips because it is able to pull and dissolve/trap the enzymes in the garlic responsible for reacting and becoming harsh and pungent (you can adjust how many times you blanch in cream for your preferences in taste). on top of that the blanching process reduces the amount of sugar surrounding the garlic and saturates it allowing it to fry more evenly and more gently without becoming burnt. i have made these so many times and i love saving the garlic cream for other dishes so there is not waste and even straining the oil you fry the garlic in gives you a very gentle garlic oil you can use for other dishes. as always i hope you all wnjoyed and please feel free to comment below with any questions or message me directly :D
