One day in the vineyards with Janko of
@kmetija.stekar always results in handfuls of vegetables and fruit. A foraging highlight from this past visit was the asparagus growing around his vineyards and wild butchers broom in the forest nearby the vineyards to make a frittata. Janko has a scatter-seed and lascia-stare approach with all of his sporadic gardens. Where he has a meticulous approach to training his vines and fruit trees, the selvatic foods growing all around the vineyards and orchards are left to natures fate. Baby arugula and spring cherries were some of the many treats we snacked on during our stay. The sheer amount of projects and experiments Janko "Hendrix" Štekar juggles peacefully with life-expertise at one time is always astounding. It's this sporadic electric guitar-solo chaos that truly expresses itself in his wines and makes them highly unique.
