Coconut Vanilla Pearl Pudding + Papaya Boat = match made in heaven! 🥥🍓☀️(also great for digestion)

If you want to dive straight into paradise from the comfort of your couch try this! It’s sunshine for breakfast or a mid day treat!
How I like it…
🍓The Base: Slice open your favorite papaya (Sunrise, Sunset, or Red Lady are unmatched!)
🍋‍🟩🍋The Elite Choice: Squeeze fresh lemon, lime, or lilikoi over the top—it’s an absolute game-changer.
🍨The Fill: Dollop in a generous scoop of homemade pearl pudding (recipe below!).
🫐🍓🥭🍌The Finish: Top with tiny bite-sized fruits and a divine drizzle of pure maple syrup.
Grab a spoon, find a cozy sunbeam, and enjoy every single bite! ☀️

🥥✨Coconut Vanilla Pearl Pudding🥥✨

Ingredients

* ⅓ cup small pearl tapioca (not instant)
* ¾ cup water
* 1 can (13.5 oz) full-fat coconut milk
* ¾ cup unsweetened almond or oat milk
* ⅓ cup maple syrup or sweetener of choice
* 2 tsp vanilla extract (my favorite is Mexican vanilla paste)
* Pinch of sea salt

Instructions

1. Soak tapioca in water in a saucepan for 30 minutes. Don’t drain.
2. Stir in coconut milk, plant milk, sweetener, and salt. Bring to a gentle boil over medium heat, stirring often to prevent clumping .
3. Reduce heat to low and simmer uncovered for 12-15 minutes, stirring often, until the pearls are mostly translucent. The pudding should still look loose; it thickens as it cools.
4. Remove from heat and stir in vanilla. Cool for 15 minutes, then refrigerate for 2–3 hours.

If it’s too thick, stir in 1–2 tablespoons of cold plant milk before serving or warm up!

Let me know if you make it! For more recipes check out my meal planner linked in bio ✨

The fossil discovery of a lifetime.

What looks like an ancient underwater garden is actually one of the largest fossilized crinoid colonies ever discovered, dating back approximately 180 million years to the Early Jurassic.

Measuring an astonishing 18 × 6 meters (59 × 20 feet), this remarkable fossil covers an area of 108 m² (1,160 sq ft).

Discovered in 1908 near Holzmaden, Germany, it took 18 years of meticulous preparation to reveal its extraordinary details.

These flower-like creatures, known as Seirocrinus subangularis, weren’t plants at all. They were marine animals related to modern starfish and sea urchins, living attached to a massive floating log approximately 12 meters (39 feet) long, drifting through the Jurassic seas.

Since 1971, this extraordinary specimen has been on display at the Urwelt-Museum Hauff in Holzmaden, in a specially designed exhibition hall built to accommodate its enormous size.

180 million years old. 18 years of preparation. A truly extraordinary piece of natural history.
