Meal prep for next week, posted early so you can plan ahead! **IG limits how many characters we can share in a caption so we have posted an expanded recipe run of show to our free Substack, linked in our Bio and shared it to stories CHIPOTLE HONEY CHICKEN BOWLS CHICKEN 3 lb boneless skinless chicken thighs 1 can chipotles in adobo* ¼ cup honey + extra to drizzle ¼ cup olive oil Juice 2 limes 1 Tbsp EACH garlic powder, onion powder + paprika 2 tsp EACH chili powder, cumin + oregano 1 Tbsp kosher salt + 1 tsp pepper Mix + marinate. Layout on a sheet pan, drizzle w/extra honey + bake 425°F 20–25 min/to 165°F. Broil for char. *Mild: adobo sauce only. Spicy: whole can. RICE 3 cups long-grain rice ¾–1 cup warm chicken broth ½ cup cilantro Juice 2 limes 2 Tbsp olive oil + salt Cook rice. When it is done and still HOT, mix in cilantro, lime, oil + salt. Fold in broth gradually. CORN SALSA 3 cups corn + 1 jalapeño + ½ red onion + ½ bunch cilantro + juice 1–2 limes + S&P. Dice + mix. BEANS 2 cans black beans + 1 tsp cumin + salt + splash broth. Warm. PICO 4 tomatoes + ½ red onion + ½ bunch cilantro + juice 1–2 limes + salt. Dice + mix. SHEET-PAN BEEF KEBABS 3 lb ground beef @fivemarys 1 white onion + 1 red bell pepper 6 garlic cloves + 1 bunch parsley 2 Tbsp paprika 1 Tbsp cumin 2 tsp EACH coriander + turmeric 1 Tbsp kosher salt 1½ tsp pepper ½ tsp cinnamon (optional) Food-process onion, pepper, garlic + parsley. Squeeze VERY dry in cheesecloth. Hand-mix with beef + spices. Press onto sheet pan + score deep rows. Bake 425°F ~15 min. Drain liquid/fat + broil 3–5 min. PEPPERS + ONIONS 2 red + 2 yellow peppers + 2 red onions + 1 bunch scallions + 2 tsp EACH paprika + cumin + olive oil + S&P. Roast 425°F 20–25 min. TZATZIKI 2 cups Greek yogurt + 1 grated cucumber + 1 grated garlic clove + juice 1 lemon + ¼ cup dill + salt. Mix. Grill oiled pita + fill with tzatziki, beef + veggies. MAPLE SWEET POTATOES 6 sweet potatoes, halved + olive oil + maple syrup. Roast CUT-SIDE DOWN at 425°F until tender + caramelized.
